my mead sucks - need help

Its been one year since I made my first mead, a blackberry melomel and it sucks. It has a strong alcohol aftertaste and very little flavor. I used a a 49 oz. can of Oregon blackberry puree to flavor. I transferred to different carboys a few times during the year to clear. At this point should...

    carboy bucket

I've been moving my carboy around inside an old plastic swimming pool chlorine bucket, the 55 lb granular size. Fits in perfectly and a much safer way of moving that carboy, especially if your brewing outside. Has two strong built in handles on side and easily slides across basement floor. I...

    Very cheap Coleman Xtreme conversion

A victim of the recession, I didn't want to spend a lot of extra money for a mashtun. I picked up a 70 qt Coleman Xtreme at Walmart for $38. Now the one I converted for my son cost an additional $60 for hardware. He went SS ball valve and a 2 channel copper manifold. For mine I took the...

    Recession Brewing

I've been out of work since November, I'm sure some of you are in the same boat. What have you been doing to cut down on brewing cost without seriously compromising the quality of your brew? I've switched to dry yeast and do mostly all grains instead of extracts.

    Ingredient alteration

Needed crystal 60L but supplier didn't have any but he said he could make a special blend with 90L. So instead of buying the blend I picked up some Crystal 90L and will make the blend myself as needed with 40L. I figured 40% of 90L and 60% of 40L would give me 60L. Now I'm wondering if this...

    fruit extract question

Doing my first mead (actually my son did it, I held the funnel). Instead of real fruit or concentrate, I have a bottle of cherry extract that came with a 5 gallon beer recipe that we didn't use. How effective is the extract as oppose to real fruit or concentrate? Will it produce a stronger...

    Ed Wort's 3 glass theory

Ed,first let me say this, I love your apfelwein, on my third batch and will be making another as soon as I bottle this one. But you're three glass theory doesn't cut it. I think if you drink 3 glasses of anything you will start to develope a taste for it. After getting down the third martini...

    corn & rice brewers

Interested in what the corn & rice brewers are doing. I made a Bud clone for a guy at work ( he gave me an empty keg for my keggle). It actually tasted good and he said it was better than Bud. I got Biermuncher's Cream of Three Crops on the agenda right now. Would like to know what the...

    bread yeast

anyone ever brew with bread yeast? beer? apfelwein? If so, what were the results. I alway have the fear of brewing and something happens to the yeast, drop it, loose it, the dog eats it. My home brew supply shop is not around the corner so I can't run right out and get some more.

    Gravity and sweetness

Is it the final gravity that governs how sweet the beer is or is it the amount of hops that balance and determine how sweet the beer is. I always thought it was the gravity but I looked at a chart of some commercial beer and Sam Adams Boston Lager's FG is 1.016 Anything I make above 1.012 is...

    Delayed fermentation

Did second AG last week. Split batch with my son. Used liquid ale yeast (Wyeth, I think). Only variables were that he put his in carboy, mine in plastic bucket and temperature. I put mine in cellar (about 64 degrees) --- after week no fermentation, gravity reading the same.. My son's...

    High FG fix

When my beer finishes above 1.012, it's too sweet for my taste. At 1.010 it 's dry but easy drinking. I have three batches in my basement right now that are undrinkable. I just did a heffe for the first time og 1.062 - fg 1.012. I'm not sure what it's supposed to taste like since the only...
