    Small, sweet mead

I like sweet meads, but don't like the high alcohol. I like low alcohol meads, but don't like the dryness. What to do?!?!?! Experiment!!!!! Today I'm starting a mead which should end at 5.8%ABV and a final gravity of 1.02. 2 liter batch: 10oz clover honey 3oz honey malt 6oz...

    Repitching after a "killer yeast"

I agree it would taste better around 10%. I may do the same recipe minus some sugar to get that. But I need to hit 20% because I will be dropping a few chunks of beef in the bottles (like snake wine, or baby mice wine)

    Repitching after a "killer yeast"

I'm making a peach/apple/white grape wine. I need to get it up over 20%. I was planning on using K1-V1116 because it accentuates the aroma of peach do well. But then I read it is a 'killer yeast' strain and will kill any other yeast in the must. Will the killer protein remain after the...

    24days

Is 24 days a possible time frame to get a session stout from grain to glass? Including bottle carbing? I know I should have started it earlier, but if I'm doing it it needs to be done by 11/20

I was gifted a scoby a few days ago. It is in a sealed mason jar. I can not start a batch with it for two months. How do I keep my scoby happy and healthy until then?

    What's next? Goodbye IPA, hello....

Wow, I love farmhouse ales. I hope you all are right about their rise in popularity because that will increase their availability. I sure haven't seen it in Southern California yet though.

    1-Gallon Brewers UNITE!

My fellow OGB I'm having issues dialing in my carbonation level. I think it may be due to not having my volume known exactly. Sometimes I get 6 bottles, once in a while I get 8. Does anyone else have this problem? How have you dealt with it?

    When to add "flavor" honey

Linden honey is Basswood honey. I have not used it. It is a very popular and plentiful honey in Russia, and I am attemting to recreate the taste of a 10th century Russian mead.
