    Anticipated shelf life of sweet red Muscadine

    The main preservatives in wine are tannins, acids, alcohol and sulphites. Higher levels of these make for extra shelf life along with good equipment sanitizing. Muscadines have good levels of tannin and acid, the rest would be how high in alcohol and total amount of metabisulphite.

    Growing hops in Mississippi.

    2 years since last post. 8 years from the time I built my original hop trellis using used untreated wood. It had become to decayed to support itself and came down this past winter. Rebuilt original section with seasoned cedar poles and treated 2x4 lumber.

    Been awhile since I posted here. Smoked two turkeys for Thanksgiving, total weight, 35 pounds. Used up most of charcoal on hand made in spring this year. Need to make up more before I smoke anything else

    I have noted a sulfur smell on starsan mix I have sealed up. I don't seal it up tight anymore, a loose lid or a lid with an airlock on it seems to do the trick.
