    Yea I've had those bolts loosen that hold the hopper to the mill. But as you can see from a picture I posted earlier, my drill is permanently bolted to the wooden base and I use to grab it by the hopper to carry around.     I've had mine for a year and love it. The only trouble it had was when I loaned it to a brew buddy and he was running the roller in the wrong direction and complained to me that it didn't work.

    Thin Brew Kettle, Options for drilling/valves?

    Step drill from harbor freight and some cutting oil. Use a punch to get where you want your center to be and use a small bit to start your hole and then use the step bit. Stop a couple times and pour cutting oil on the bit. Use a file to clean up the edges. I wouldn't worry about the thin metal.

    Mash Tun, 3/8" or 1/2"?

    Its not needed. I was in the same situation about 3 months ago and I did upgrade the false bottom to a 1/2 inch elbow (mainly b/c I had extra parts laying around) and I feel like I have to close my ball valve more so it doesn't flow too much and suck the mass down.

    Burner Backfire

    I'm not sure what the proper term is but it is possible to pull so much propane out of the tank that it will kinda ice up the tank and will give you a very inconsistent flame. I have the Banjo Burner Plus KAB6

    Is this safe?

    I've brewed in doors for the past 3 years with a 100,000 btu burner. However I live in a townhouse with concrete floors and big sliding glass doors on each side of the room that I get a good breeze coming through. So your set up looks alittle sketchy with wood floors and less ventilation...

    I bought a set also. I have not brewed or boiled anything in them yet but I'll comment on the thickness. They feel and seem just as thick and sturdy as the 10 gallon economy pot from Northern Brewer that I've been using for 3 year with over 100 batches and I have no complains about that pot.

    adding dry hops after carbonating keg

    I've only done it once and 1 ounce of Simcoe "hop tea" into 4 gallons completely changed the beer. It added enough intensity and aroma to a kinda plain and boring IPA, so I could only imagine what adding it to the beer would have done.

    I thought about doing that before but then I read somewhere on here about using hop pellets in a french press to make a "hop tea" and I think it turned out amazing.
