    I agree with Chris. When we dry hop, we need to open the LBK to drop in the hops. 10-15 seconds is no biggie - just be careful of the surroundings and don't be right next to an open window where a wild yeast can swoop in and land in the LBK.

    Exactly. The extra week gives the yeast time to clean up after themselves. I've had no issues from leaving the brew in the fermenter for 21 days.

    I agree wholeheartedly on the CaraPils and Crystal malt. I've been adding Crystal 60 to my extract brews (steeped 30 minutes at 155) for the caramel/color and it's working wonders. Too bad the Mike doesn't like citrus flavors.....this one would go great with a Cascade or Centennial hops boil...

    Kealia's right - don't throw a bunch of sugar into a MrB batch trying to boost the alcohol level. Deluxe refills are higher ABV and there is also the added malt option. Sometimes it's best to make a few MrB kits straight up before you start to go all mad scientist. :rockin:

    I'm on my 4th batch (brewed Sunday the 5th) and I have to say that all of them have acted differently regarding signs of fermentation. The straight up basic kit (Golden Cowboy Lager) took right off, within a few minutes. The deluxe kit (HCCD and Pale Export) took off after about 2.5 hours...
