Pumpkin Ale Fail....read so you don't do this!

Alive and well!!!! After a couple of weeks in secondary it did not clear as well as i hoped so i filtered and kegged. I took a final gravity sample before and the beer is now at 7.15%. I then force carbonated at 10 psi for a week @ 35 deg. in my lagering fridge. Yesterday i lowered to 3 psi and...

Pumpkin Ale Fail....read so you don't do this!

*UPDATE* So its been 1.5 weeks in the secondary and the beer has started to clear up and has a very faint aroma of pumpkin spice. Most of the nasties have fell out of suspension. Gonna give 1 more week and check the gravity and taste for any improvement. Fingers crossed!

Pumpkin Ale Fail....read so you don't do this!

After 2 mediocre pumpkin ale's last year i decided this year I would shoot for the moon and try to get as much flavor in this one as possible. I formulated a basic recipe with 1056, 2 oz. of hops, and a 10lb grain bill with 2 row, special B, and caramel 60. This time around i took a huge chance...

Is it too late to save my hefeweizen?!

The ester profile is definitely set by now. Racking to the secondary was the right move. I always rack as soon as primary fermentation is over, one week or less.

Been brewing for quite some time now, but realized i have never added my starter gravity to my wort OG. Looked online for some calculators but really didnt see any that could help. So my question is: If i make a 2L starter with a gravity of 1.040 (or less), how would I add that to my gravity...

    Homebrew Contest Issue

I am entering a local homebrew contest in which you must bring your beer in growlers. I only bottle my beer and do not have a tap and co2 set up. If i pour my bottles out into the growlers im afraid my beer will become flat and no head will remain for judging. Any suggestions?

Trying to clone Beer Here Nordic Rye

Hey i am formulating a Nordic Style beer recipe or "Sahti" as they call it. How did yours come out? I have done a lot of research on traditional nordic brewing ingredients and procedures. Most breweries use locally grown and processed malt, pharmacy hops, smoked specialty malt, rye malt, bakers...

    Proper Yeast Starter Usage

So im doing my first Dunkelweizen and 24 hours prior i made a starter. I went with Wyeast 3068 Weihenstephan Weizen. I kept at 64 deg. and the starter looked great. My only concern was when i piched to the primary i gave the starter a good shake and swirl, but could not get the thick bottom/trub...

    Yeast didnt activate!

I forgot to add 2 other variables: my wort size is 2.5 gallons in a 5 gallon better bottle (headroom issue?), and that this was a very sugar rich recipe that had 2- 16 oz cans of pumpkin and a teaspoon of pumpkin spice and turbinado...thoughts?

    Yeast didnt activate!

Im making a batch of pumpkin ale and used wyeast 1272. I activated pouch 2 hrs before pitching to the fermenter and it swelled a little bit but not too much. Its been 12 hours and nothing has happened at all. My wort took 1.5 hours to chill due to lack of ice, but i dont think that is the...

    Making my first pumpkin brew

Saving 1/2 of Wyeast 1272 American Ale 2?

Im making a 2 gallon batch of pumpkin ale and my recipe only requires half a pack of Wyeast 1272. My question is can i save the other half for a near future brew? I am considering making a starter, and putting it in the fridge inside of a paper bag to keep the light, but im not sure if my yeast...
