    Improperly stored grains can cause a metallic taste, but the most common reason is using inferior/wrong vessels for brewing. Well that and high iron water.

    I recommend finding a local homebrewing club. Watch someone brew a batch, ask questions. Buy one of the 'How to Brew' books. Read it as you are accumulating brewing gear. Good luck and welcome to the obsession!

    Sweet Stout

    To your first question, no. You can have everything else in line and you'll come out with a stout, but not a sweet stout. Ditto above on adding the lactose at 10-15 minutes left in the boil. Depending on how sweet you want it, 1 lb. is a good starting point. Steve

    Hops difference

    Both are in the aroma hop category. Hersbrucker is lower in Alpha Acids (1.5-4%) so, you may need to add less Hallertau (3-5.5%). Hallertau is a bit higher in oil (.7-1.3) versus (.5-1). Both are described as having a fine noble aroma. I'm sure you are fine. Steve

    You didn't mention what you target flavor description was so it is hard to very much of the recipe as I/we don't know where you are trying to go. But the only thing that seems not right to me is the dry hopping seems quite light. Usually a minimum is two oz., but most use 4.
