    I don't live in the DFW area but my bro in law brings me a lot of beer from there. The temptress is pretty awesome, I still have a 4 pack of it. I would suggest you try the Blood & Honey, I like it a lot, It opens a whole new world to American Wheat beers.

    When I make my hop tea, I take into account, whether I need more bitterness or more hop flavor. I bring a half gallon (or less) of water to a boil, add hops and taste it every few minutes. When the flavor and bitterness match the profile I am trying to achieve I stop the boil and cool it down...

    My other thought was it didn't cool fast enough and you continued to get bitterness from the hops, but 8 fl oz isn't much. I would imagine that small amount would cool pretty quick. If it took more than 10 mins to cool below 180F or so, you might have gotten more bitterness than planned. Did you...

    It sounds like you may have boiled your hop tea more than 20 mins. When I make a hop tea, I usually taste it every few minutes until its just right.

    Correct, no axle. I just welded 5/8" bolts to the frame, slipped the wheel on and put on a lock nut.
