Planning my first sour, need advice

Quick update on this. I brewed it 1/4 kept in primary till bottled on 6/6. Waited 6 weeks to try one and have had several since. Came out really well. It's dry with plenty of brett and the lemon comes through surprisingly well. It was a great beer over the hot summer days. I plan on doing this...

    Attempting Supplication clone

I picked up 5 lbs of fresh Oregon cherries yesterday (3lbs rainier, 2 lbs dark/sweet). I tried to find sour cherries but couldn't so i settled on what was fresh and tasty from the farmer's market. Pitting that many cherries is a bit of a chore. I froze them last night and thawed them today...

    Pellicle Photo Collection

Saison brett almost 6 weeks in. Just a little one, but it's my first sour beer so i'm excited to see it forming

    Keg Dregs

Another option: I have 2 fresh sours in primary right now, a Saison (1 month), and a brown (2 weeks). I could just dump half into each and add to the bugs already in those beers?

    Keg Dregs

I work at a beer distributor and I see all the kegs that come back from bars and such. I got back a keg of Jolly Pumpkin Bam Biere back today and had an idea. There was still a little on the bottom of the keg and hooked up a party tap to it and let it spit and bubble into a jar to get what I...

Sour starter smells like nail polish remover

I started a supplication clone a few weeks ago that had a similar smell. I pitched white labs abbey ale yeast (530) , sour bug mix 1 (655), and the dregs of a supplication (no starters). The next day I had a vigorous fermentation but a strong nail polish smell coming from the airlock. 12 hours...

    Bottle Shop Trip Suggestions?

You're in for a treat. Cascade makes great beers, I actually had a pint of their Blueberry sour yesterday on tap. They aren't cheap though, most are in the $20+ a bottle range. I brewed my first ever sour yesterday actually. It's a saison with whitelabs670 and the dregs from a Logsdon Seizoen...

    Bottle Shop Trip Suggestions?

I see you are in Oregon, without much of any sour brewing experience i think the sour beers from Logsdon, Block15, and Cascade should all be available (amongst many others) and all make amazing beers. i'm sure you could brew with dregs from those and come up with an interesting blend.

Planning my first sour, need advice

I brewed this afternoon. Everything went smoothly, i pitched the 670 (no starter) as well as the dregs from a logsdon seizoen bretta i drank while brewing. I did my usual saison recipe bumped up with a little more dme (og 1.059) with 2oz of liberty (1@60, 1@15min) as well as some crushed...

Planning my first sour, need advice

Thanks for all the replys! I did manage to find some 670 at the local shop, although it says best by 1.9.13. That's cutting it awful close, should i bring up a starter? Otherwise, i'll be brewing my usual saison recipe, and just add the dregs of a logsdon and the vile of 670 as usual and keep it...

Planning my first sour, need advice

thanks! that's exactly what i'm going for (a funky farmhouse saison) i'll see if the local shop can order it for me if not i'll search the web. Getting excited for this project. Edit: So, could i just brew a saison as usual and add the 670 after a week? I could leave it in primary or transfer...

Planning my first sour, need advice

After several batches I thing I'm ready to start a long aging project. Sours have quickly become a favorite of mine and it's time to start one. I'm not a huge fan of Flanders reds or browns. I have really enjoyed the Logsdon saison Brett, and Anchoridge Love Buzz, as examples of what I'd like...

    My house smells like hops!

learning the different flavors and aromas of different hops, grains, yeasts, etc has been one of the best parts of this new hobby of mine. It makes trying a new beer more enjoyable when you can pick out different flavors you know from experience. I'm lucky to work at a beer distributor and get...

    Beginner question...pumpkin ale

another update: Bottled over the weekend. It sat for 5 weeks in primary, and had a final gravity of 1.020 By my math this will put it at 8.7%. It tasted really good from the sample i tried and cleared up really well, i was expecting a more cloudy beer but was pleasantly surprised. I did add...

    ABV/OG question.

thanks guys that certainly does help. Next time, i guess i'll make a starter. If my OG is 1.085 that would make it 8.7%. Not a whole lot less than i figured. I'm hoping they will be ready by christmas for gifts. We shall see, but it tasted good today from the sample i tried.
