    Cold crashing AND bottling

    I have a question. If I were to do a cold crash and then immediately bottle while the beer is cold (38 - 40 F), shouldn't I adjust my priming sugar level? I ask cause the one time I did a cold crash and bottled it cold, it was way over carbed.

    Buy this Book: Brewing Classic Styles: 80 Winning Recipes Anyone Can Brew by Jamil Zainasheff. I recommend it to everyone, especially if you are starting out.

    Best bottles for bottling beer

    I use Sierra Nevada and Sam Adams bottles. Never a problem with either. The Sams take up less shelf space but I prefer the 24 oz SNs.

    7.9 gallon primary to big?

    Like BioBeing said "Make more beer". I only use the 7.9 buckets. I can make larger batches (6 - 6.25g) and there is less chance of a blowoff. Never a problem even with 5g batches.

    How do I know when its done fermenting?

    I'd go at least 12 to 14 days in the primary, reguardless of the hydro reading. I used to do the 1-2-3 method (1 wk primary, 2 wks secondary, 3 wks in bottle) but now I go 2-3-3 and have noticed a significant improvement in the quality of the beer.
