    Beck's Sapphire is an amber ale so would an amber ale kit with a little more caramel and roasted malt flavors with a slight finish of citra or sapphire hops get me close to what I am wanting as a starter to play with and work from?

    my first cider results

    I want just a bit more carb but i have some extra screw on bottles i can check to keep from bombs. But im glad to know that it is normal. Im stopping the fermentation early to keep it from going too dry.
