    Bochet Mead (burnt mead)

The pressure canner works well. 80 min at 15psi. About 12lbs fits in 5 quart jars. The taste is toffee/caramel, a little toasted marshmallow, with dark coffee notes. Oh and WVMJ. I did a batch of bananas also but only did water bath because I envisioned exploding lids. Glad I did though...

How much honey for 6 gallon of mead?

Costco honey is legit. Thread and article about it in an earlier thread. https://www.homebrewtalk.com/f30/costco-kirkland-honey-article-350878/ I have made a few batches with their clover and it has a really great flavor. But for the original question, I do exactly what fatbloke does and...

Plum Wine, Complete newb! Save me from myself!

I wouldnt dilute with water at all and hope to end up with a good medium to heavy body. The steam juicer has diluted it some also. I would also do a SG of 1.085-90 to preserve some of the plum taste and smell. Use winecalc http://mpesgens.home.xs4all.nl/thwp/winecalc.html if you dont want to...

    Apricot mead/melomel recipe help needed

Thanks for the input Arpolis. I think you are right and I am going to drop the apple juice. I have much more experience with wine and I kept thinking that I need a base. But the honey and its characters are the base of the mead. So just honey and a nice filtered water to 5 gal. Do you think the...

    Apricot mead/melomel recipe help needed

Hello everyone. New to the forums and fairly new to brewing in general. Had my first shot at a mead with the caramel apple recipe which is about a month in. I can already see that I am going to be a mead/melomel/cyser enthusiast. So I had an idea since I will be getting married next summer. I am...
