    Aging a Russian Imperial Stout.

    For Christmas, I was going to brew a Russian imperial stout in July and age it until December for the family. What would be the best way to age it?     Dry hop question

    Wednesday I'm dry hopping my ipa, and I was wondering if using a stainless steel nut would be hazardous to the beer? I'm using it to weigh down the mash bag filled with hops to get a more even dry hop.

    Too much carbonation.... What do?

    Brewed an ipa back in April. Primary fermentation for a week, dry hopped, then secondary for 1 week, then bottled at 4.5 gallons with 3/4 cup of priming sugar. Just cracked or open after 2.5 weeks and it's WAY too carbonated. It foamed and has the carbonation of a soda. Any ideas what I should do?
