    Fermentation temperature too high?

    Deployed a swamp cooler, and the temp is dropping...now at 73 degrees. The frothy bubbling through the cap has subsided. Hoping to get the bucket temp down to 65ish...would that be good?

    If we get it in a swamp cooler and bring the temp down we shouldn't need the blow off tube, right? I'd rather get the temp right vs. rigging something new to control a possible blow off. But if you think both are needed, I'd also rather not screw up the beer!

    It's an IPA. My buddy doesn't like Belgians, so that's not an option. When you say extended aging, you mean in the bottle, right?

    Now that we are in the hot month of July, the basement is about as warm as it gets. Wondering if it's too warm. We brewed on Tuesday (7/3), and this morning (7/5) the ambient temp in the basement is 72. The thermometer on the bucket says 77 degrees. Is this an issue? My understanding is...

    Good idea to bottle a few 12oz as tasters, and save the 22's for when you know it's really ready and good. We'll do that for our next batch. This time we just did one b/c when we were getting near the bottom of the bottling bucket we didn't have enough for a 22. Thanks for the help.

    Refractometer before/after fermenting?

    Has anyone used the BREWfractomter listed on Ebay? It's more expensive ($65), but sounds more specifically geared for brewing. I'd be fine with still having to do calcuations if needed, just wondering if this one maybe takes that step out for you? Just thinking using one of these is so much...

    Yeah, I'm sure. We have one 12oz bottle (the rest are 22's), so I think we'll crak that for the first one. Right now the bottles are in the basement which is holding steady at 65 degrees. Is that too cool? The kit said between 64-72 (I think). Should it be closer to 70, or above? How...

    That would be great, please do! The only modification I would think about is making them stackable, with something that "locks" them together. Not sure that made sense...but just mean something to keep the one(s) on top from sliding off.

    Nice looking crates! Some of the ones I've seen posted look a little heavy, but these look nice and light while still plenty strong. I'm looking to build some for 22oz. bombers, and I might modify this design for that.

    I just picked up their IPA kit for my first batch this weekend. Looking forward to it. I haven't read through their instructions yet, but hoping it's clear what to follow and what not to follow (having heard here "don't follow their instructions to a T").

    elpenoso, Your mini fridge seems like a good option for the OP. Any pics of your setup? I'm thinking about trolling Craigslist for an old fridge or freezer to convert, just not sure on what size to go with. I guess bigger if I can fit it, as it would allow for multiple batches.
