    Secondary or Bottles

    Unless you have someone to fill the airlock with sanitized water, so it doesn't dry out, while your gone I would bottle it for that reason alone.

    Last week I pitched an older (mfg date of mid april) wyeast smack pack into a belgian dubbel with an OG of 1.060 without a starter. It took off after about 2 days. My LHBS Guru said as long as you're not much over 1.060 you don't need a starter.

    newbie question on siphoning

    Bubbling in secondary?

    Sidepart and sweetcell both hit it right. I've seen it happen often in my secondary and for me its been because of slight variations in temp. (Knock on wood) I haven't had a bad batch yet.

    First brew

    Big beers, such as belgian dubbels, porters, stouts & others can take a month or more. Take a hydrometer reading, leave it for a couple days and take another to find out if its stopped.
