    Consecration kit from MoreBeer

Don't assume the sourness level is right, taste it so you know! :mug: I tasted mine every 2 months or so to keep an eye on how things were coming along. It was very interesting how it changed. When you add the oak, increase the frequency to every 2-4 weeks. That reminds me, I should...

    Consecration kit from MoreBeer

I just bottled my MoreBeer Consecration kit after 13 months of fermenting and aging. FG = 1.005. I used Rockpile yeast and 4oz corn sugar for bottle carbonation. It tasted and smelled great! Only a few weeks to go till tasting the final product after over a year of waiting.... I had a...

    Tart of Darkness

Thanks for the response, Matt! I did a bit of searching about using Roeselare in primary right after posting the question, and your answer confirms my conclusions. :mug:

    Tart of Darkness

I just picked up a couple of these kits to brew with a friend. I've got a carboy of MoreBeer's Russian River Consecration that's been going since July, and figured it would be good to have more than one sour in the pipeline since they take so long to make! One question I had, hopefully...

    Consecration kit from MoreBeer

I pitched the bugs directly into secondary; I did not rack off of the currants. As you said, it seems that Russian River does it this way in their barrels. -Carl

    Consecration kit from MoreBeer

I didn't make a starter for the Brett, just pitched the White Labs vial. Even with no starter, I had an active bubbling air lock the very next day, which persisted for the next 2 months. The currants were added directly from their packaging to the bottom of the secondary fermenter, and then...

    Consecration kit from MoreBeer

In MoreBeer's interview with Vinnie, he talks about pitching just Brett and giving it 6-10 weeks on its own before pitching the bugs to make sure it does its thing before being knocked out by the low pH from the bugs. This is why they recommend pitching Roesalare after the Brett ferments on its...

    Consecration kit from MoreBeer

Thanks for the responses guys! Sounds like I'll be letting the primary finish out (at 1.030 right now and still bubbling away) and treat the secondary like any other beer and be careful not to splash. Pretty excited for this one!

    Consecration kit from MoreBeer

A buddy and I brewed 2 batches this week and will be racking to secondary in a few days. I've got a question about pitching the Brett. Since Brett needs oxygen to reproduce, should I aerate in the secondary prior to pitching, or is adding oxygen at this stage going to introduce off-flavors...
