This is my take on a cucumber saison.

I have wanted to brew a cucumber saison for some time. Once I tried Cigar City's Good Gourd, I was hooked. I understand that it might be a "love it or hate it" sort of beer. But I finally took a shot a making my own cucumber saison. I will let you know how it was brewed and describe how it...

    Underpitching a huge Pumpkin Ale

I brewed a Huge pumpkin ale over the weekend and I made a 1L starter for it, using a 1.040 starter SG. The pumpkin ale came in at a whopping 1.104. I am now afraid that my starter was not big enough. Should I begin to consider adding a yeast packet or another starter to the wort? Fermentation...

Scottish ale, Increase DME or not.

I am brewing a partial mash Scottish ale kit from Brewers best, Recipe here. I really don't like that it is only 3.5%ABV and would like to kit that up a notch. The recipe calls for 1 lb of DME. I have some 2.5 lbs of extra DME. Would I gain more ABV without disturbing much else by adding the DME?

    Super Yeast?

I made a Lagunitas IPA clone last Saturday. I created a yeast starter (Recipe below) and applied it to the 1.074 SG wort. 7 hrs later there was some activity (a blip every half second). By Monday morning the beer was bubbling so vigorously that the small quart sized bucket the blow off tube was...

    Starch Conversion

Last night I made a Lagunitas IPA Clone, I had issues fully converting the starches. After one hour of mashing (grain bill below) at 156F I performed an iodine test. I got a color change to black. So I left it for 15 minutes more, still black, I left it for 20 minutes more, still black. At this...

    Magic Hat Clone

Hey guys, I am attempting to brew a Magic hat clone and have a question about the process. I have fermented in my primary for two weeks now and the recipe calls for adding apricot puree to the secondary. Problem is I already past the stage where I would go to the secondary (right?). Do you...

To bottle or not to bottle.

I have had an IPA brewing for 2 weeks now. The problem is I have it fermenting in the upper 70s (I live in Florida so without a cooling apperatus this is the ambient temp). I have had one brew fail because of this (I think). I recently bought a wine fridge that I can now use to control the...

Malt Extract vs. All Grain brewing

I would like to start a debate on the benefits of using malt extract over all grain brewing. I have done two batches (one wheat and one IPA) using an all grain method. I compare it to eating process foods over fresh foods. Fresher foods provide a better taste and process foods often taste...

First Brew went badly, need some help troubleshooting.

Just to reiterate, this is my very first attempt at brewing beer. So I expected mistakes. Can you (EXP'ed brewers) help me identify the errors. I tried to brew a wheat beer. I had around ten pounds of wheat/barley (90:10) malt mashed, sparged w/ 170F water and then boiled + minimal hops and...

Hot Brewing at Fort Myers, FL.

My primary fermenter diligently works even at 80F which is what my thermostat is set to (I live in South Florida). Tell me what I should be looking out for during an 80F fermentation to ensure a good brew. I hope one day to get a wine cooler to ferment my beer at 68F, but if you could describe...
