    the more i taste it the more i realize its not as bad as i thought. there is a whisper of heat from the alcohol which tastes and feels high in content. with carbonation i m betting this beer will be pretty drinkable but again still strong. in a month this beer will be best. thanks for any input...

    what would happen if i added more yeast at this point? its been almost five weeks since original pitch. i dont want a yeasty brew either. i dont have a test tube to take hydro readings right now. so a thief and refract is all i have. what would you all do in this case? again its not TOO sweet...

    So i made a monster IIPA last month. BRY-97 (1pkg) The original brix read 22. Four and a half weeks later my brix reading is 8.     My iipa came out to 22 brix. How long should I keep this on the cake before dry hopping it?

    oaking a lite beer questions.

    I have 1oz lite toasted oak chips that i boiled for 10 mins then let sit in some Jeffersons 10 year rye bourbon for a total of 8 days so far. How long should they soak in bourbon? And how long in the fermenter? I know i should taste it to see where i like it but i dont want to check everyday...

    Looking for a light low ibu easy drinker. With honey and rye. I just figured the bourbon oak was a natural fit. I have never had oak in a beer i made. What seems to be the most confusing part?

    I was planning a honey-rye pale ale and wanted to add some bourbon soaked oak chips. I have never worked with oak before and would like to know the which kind of hops pair well with the wood. Also how to handle the chips before adding (quantity, soaking time, steaming?). Thanks for your help.

    just made the best beer i have ever had...

    Crystal clear. No gelatin. I can't stop drinking this. Pares really well with jeffersons 10 year... Just saying :mug:
