    So who's brewing this weekend?

    Brewed a Scottish export this morning. Wound up a bit high on the og, but it should be fine. I went with the 120 min boil and reduced down a gallon of first runnings in another pot. Gave the wort a nice deep flavour. It's now bubbling away at 58*

    What I did for beer today

    Stepped up a starter of 3068 which is the first yeast I've grown from a slant. Looks great so far. Also culturing some 1318 from the bottle dregs of a pumpkin ale. Took a while but it finally woke up and started growing.

    Just bottled my wild yeast saison. Captured yeast from my front porch by letting a jar of wort sit out for a few hours. Stepped it up with a starter and brewed a 2.5G extract saison. The yeast demolished the sugars in the wort and it finished out at 1.004. Drinking the leftovers from the...

    Drinking the 6oz of leftover beer I just bottled. This is a saison I made using cultured wild yeast from my front yard. Amazing how much it tastes like a proper saison.

    What I did for beer today

    Just autoclaved a bunch of slant vials to start up my yeast bank. Also innoculated a few plates with 3787 and Pacman from a bottle of Imperial Younger's Special Bitter.

    21 batches give or take a couple. Started back in '06 but have only been serious about it for the last year or two.

    Not actually brewing for myself, but will be guiding my brother through his first brewday on Saturday. We'll be brewing a simple extract hefe that I've done before.

    Trouble with style

    With a few tweaks I think you could make something pretty close to a Kolsch, mainly based on your yeast choice. Leave out the black patent and Fuggels and save them for a stout or something. Use 2 lbs of the DME and save the rest for starters. This will get you in the neighborhood of 1.048 OG...
