Can I Submit an Aged Cider to BJCP Competiton

Hey guys, A quick question the Alamo City Cerveza Fest is having a competition with all the BJCP styles accepted. I am wanting to submit a Blueberry Cider I made a few years ago, but can't find anywhere wether something that has aged that long is acceptable or if it's "cheating." Anybody know...

    Cimary Clone Didn't Carb

Hello all, I need a little advice. I brewed a Chimay Clone. All went well with the fermation, OG and final gravity were on target after 2.5 weeks. I used Cooper Carb Tabs as I have done before - one tab in each 12oz bottle. After two weeks, they weren't carbed. Gave them another week, and no...

Hello all, I'm trying to convert a "regular" Red Ale I've brewed before into a Red Rye and would appreciate any thoughts. My biggest question is over ammt of rye to add. Not sure if I should do 1/2 lb. or 1 lb. Here's what I've thinking for a 5 gallon batch. 5lbs. Extra Pale Extract 2...

    Cooper's Carb Tabs

Question: I'm bottling an Irish Red in 22 oz bottles. I'm planning on using two Cooper's Carb Tabs per bottle. Any thoughts on how long it will take? One thread mentioned 3 days (seemed weird) another mentioned 3 weeks. I'd appreciate any insight as these will be given to a wedding party and...

Another use for Sweet Mead/Wine Yeast

Hello all, I have a vial of WHite Labs Sweet Mead/WIne yeast (description below) that I bought while my first ever batch of JAOM mead was still fermenting. I've decided thatI really don't like the taste of mead (not to offend anyone). Any suggestions for something else I could use the...

First Time, Small Batch in one month???

Hello all. I've homebrewed numerous beers and a couple ciders. I'm thinking about mead. I'd like to do a small batch 1-2 gallons so I don't tie up a larger carboy. I'm also slightly impatient waiting for it to finish. I found this recipe online and was hoping for suggestions to cut it down...

    Way too much carbonation

Hello all, A quick question about carbonation once beer's already been bottled. I finished bottling a Saison a month or so ago. After two weeks, I put them in the fridge. Everytime, I open open, however, foam rises out of the bottle, even if it's been sitting still for several minutes. When...

    I totally forgot the hops!!!

Hi all, After completing my last batch of partial-mash yesterday I realized I completely blanked on adding hops. It didn't occur today, so it's been going about 24 hours. Any suggestions? Can I boil hops and then add at this point? Am I totally screwed? Please help? Thanks, Matt
