Why is my beer too dry?

While I was looking at my clone recipe, I did notice that I ignored the yeast suggestion and used US-05. The recipe calls for Wyeast 1968, which has an attenuation of 67-71%. This is even in the description: " Attenuation levels are typically less than most other yeast strains which results in...

Why is my beer too dry?

Thanks Martin, I am using RO water with 1 tsp of gypsum, and 1 tsp of calcium chloride. In addition I add 1/2 tsp of lactic acid. I'll check out your water link!

Why is my beer too dry?

That's really not a bad idea for cold weather! Although, I try to do as little work as possible :), and bringing a hot kettle with almost 8 gals + grain inside does pose a little more chance of a spill. After the boil I bring it in, but at that time it's just under 6 gals and the grain and...

Why is my beer too dry?

I use BIAB outdoors on my apt patio (not even in a garage). I'm in Minnesota, and the outdoor temps were mid-30's (which was warm for January!). I do wrap my kettle with a Columbia winter coat during mash, but I think maybe that's why my temps are dropping a bit this time. Thanks everyone for...

Why is my beer too dry?

I just kegged a couple of 5.5G batches of APAs. They both use the same grain bills, but in one I used Cascade hops, and the other, Mosaic. Here's the grain bill (all organic btw): 9.5 lbs 2-row 8oz Crystal 60L 8oz Crystal 120L 4oz Cara-Pils Beersmith predicts OG 1.052, FG 1.011...

should some styles be bottled and not kegged?

I kegged this at a very dry 1.0015! That was drier than the recipe predicted. It was good, but next time I'll brew a saison or something like it, not this recipe. I agree with the comments about strength and aging, but my point is about being able to rouse yeast in the bottle, which you can't do...

San Diego Super Yeast WLP090 FG too high?

Well, I finally kegged this at 1.012. Can't complain too much about that. Lesson learned is that this yeast WLP090 is a bit touchy. The day before I brewed this I was in a class at Northern Brewer listening to Neva from White Labs talk about yeast. I asked her about WLP090 and she said that...

San Diego Super Yeast WLP090 FG too high?

peri', I mashed at 152. Just checked (6/24) and it's now at 1.013. Lock still slowly bubbling (once a min). I think I'll rouse again and see if I can get another point or two lower and call it done in a day or two. Thanks for the input!

San Diego Super Yeast WLP090 FG too high?

Not a refractometer, but I am using a new more accurate hydrometer. It was $20 and marked from .0980 to 1.020.

San Diego Super Yeast WLP090 FG too high?

Brewed a nice APA recipe (Tiny Bottom Pale Ale - I think the creator is on this forum). Used WLP090 - I'm using a swamp cooler to keep temps in the 60's. Went from 1.052 to 1.015 in 3 days. Then the next 10 days, went from 1.015 to 1.014 only. Keeps bubbling slowly, but maybe that's just gas...

should some styles be bottled and not kegged?

Hey all...my first posted question. Have had a million others answered just by reading other posts. I'm on my 9th batch...got a kegging system a few batches ago and I love it. I've also done BIAB the last 3 batches, and that's worked out well. So I've got a Farmhouse Biere de Table in...
