    I could use some acid malt in the mash, just a small amount and then use lactic in the sparge... As per your earlier suggestion I have converted the alkalinity to bicarbonate [emoji847] Cheers for the suggestions lads

    Just got my water report back...(work water as home is waaaayyy to hard) Ppm Ph: 6.25 Nitrate : 180 Total hardness (as CaCO3) 133 Calcium: 43.7 Magnesium: 2.83 Chloride: 16.10 Sulphate: 51.93 Alkalinity (as CaCO3) 94 I've noticed they didn't provide sodium report I've input the details into...

    This was my first AG brew way back...I made some silly mistake with my hydrometer so added more candy sugar (as my gravity was way too low , or so i thought, never let sample cool) and ended up with a fantastic beer but at 8.5% whoops.. cheers Revvy

    Rhubarb Wine

    well there it is all racked to secondary. I've racked it again since it was 2 wks in secondary and the lees were about 1/2". Looks good and smells great

    This evening brew grain to glass (to identify problems)

    2 weeks in primary and gravity is at 1.010, 2 more points to target... It's amazingly clear already..... Defo pointing to water issue. All that's left is to wait and taste... Samples had a bready taste to them but some of the true was in the sample so I'll reserve worrying until I rack for Lagering

    Everything added yesterday evening and just added yeast this morning (15 hrs later) hit 1.093 gravity so look good :) also the sample tasted great, I know it'll change but still nice to start with good flavour cheers for the recipe yooper
