    Cider Rookie Please Help

    Look at the stickies in this forum, and there is a lot of useful information. +1 on using Nottinngham yeast, that is my go to. One of the stickies has a good breakdown of different yeast strains, both postive and negative.

    Any fix for over carbed beer?

    +1 The bottles should be chilled for about 2 weeks in my opinion, and I have found that for beers that are over carbonated, lowering the temp in your beer fridge helps as well.

    Oopps, frozen beer?!

    I think that it should be ok. Bring the temp back up to 40 degrees or so and continue carbing. I have read that freezing and subsequently thawing beer helps make a clearer beer, but I have no experience with that. Good luck!

    Sorry that was supposed to be 1oz of orange peel. I put the container that the honey was in into hot water for about 10 minutes prior to adding it to the boil so that it pours out of my conttainer and into the brew kettle easily. Then use my spoon to scrape the sides of the container a little.
