    When I was germany and got racks of beer from the local brewery it was all bottled the old fashion way with corn sugar and they all were cloudy.     Do not let sunlight hit the carboy. Once I oxidized the beer because I let it sit too long in primary and then racked to secondary after all the air lock bubbling had ended. I let it sit in secondary too long with oxygen on top of the beer. Now I either leave it in primary until keg/bottle or...

    A hydrometer is good to keep records but all you need to avoid bottle bombs is wait until the air lock bubbles greater than 60 seconds. Given the temp is in the right range for the beer

    What was green? The sediment your poured from bottle to glass? Did you use hop pellets? I wouldn't change the plan.

    In portland oregon they have a sour beer trading room. I'm not a fan but many seem to be. That happens when you don't bottle soon enuf our when you rack there isn't enuf yeast action to produce co2 and push the oxygen out of carboy I think
