How do I make a golden ale?

If the color you want is very very light.... then I would suggest going for a "lite" style beer, usine Rice Syrup Solids instead of Malt Extract.... I made a batch for my wife, I prefer the dark stuff but, she likes the light stuff. When they make malt extract, the cooking down of the...

    2 or 3 Gallons?

I boil 3 gallons put one "iceeee" cold gallon at the bottom of the fermentor, then put the whole kettle in a cold water bath until it drops to about 80-100 degrees...(preferably 80) Then I top it off with another gallon of cold water.. It doesn't usually take tooo long to cool the wort.

Simple fast kit tricks, great results

I tend to spend ALOT of time on the recipes i make for me.... (and I fly through the ones for others) The American Lite, and Cider I made recently for the "ladies" for example.. I flew through those.. :) As for my others.. A little TLC goes a long way!

    Rookie Mistake.....

That milk crate Idea is great..... Just as a follow up... late last week I moved the Brown Ale from Primary to secondary. I used a sanitized wire hanger to "retrieve" the cork. No problems. Then dumped my Honey Brown Ale on the Yeast Cake.... Fermented pretty good for about 3 days...

well so far the activity has stopped, I get like 1 bubble every 5+ minutes... ONce I have some time, and some bottles ??? I guess it is time to prime... The fermentation in primary only lasted (vigorously) for about 4 days, and died off pretty quick.... the OG was 1.050 and the SG when...

    Rookie Mistake.....

so far the wire hanger is the best (simplest) idea.... I will give it a try. Yeah, i was sittin there thinking.... bummer, it's in the wort...... Oh well, I am sure the stuff will still get me drunk. But I was happy i had an extra cork laying around. ha thanks all

    Rookie Mistake.....

So, I brew a Brown ale... a Newcastle Clone. I do everything like usual... alll is going well. I pitch the yeast, and put one of my corks on the primary so I can shake the hell out of it... So far... so good. I go to put the airlock in (you know where this is going) I think eh, why not...

My First Cider, So far, so ...yum

I had heard that ale yeast can be sluggish in cider, that's why I used the yeast nutrient... I am hoping that would speed it up a little? am I wrong in that assumption? Anywho, all good ideas, thanks a bunch.

    No-Hop Brew

EXACTLY... hence the nickname for some brewers being "Hopheads" I like some hops, but not too much... A little sweet aint tooo shabby for me.

    Little to nop head.

I usually try to rinse my pint glass out really really well RIGHT before I pour one... then the head may not be GREAT but... after I drink the first one... the head on the second one is better, and by the third it is reall nice..... or is that just my beer goggles?? well, either way, they...

    Wyeast smack packs

Funny you posted this thread..... were you by chance using # 1098?? I just brewed a batch of "Brown Ale" on Saturday and had the same "non-swelling problem".... but I had read on here before that they don't necessarily need to swell So no biggie (and I had actually smacked it right, it just...

My First Cider, So far, so ...yum

As far as the Juice concentrate... i will try that on the next one.. thanks! As for the coopers ale, I went with it quite simply because the owner of my HBS said that the ale yeast wouldn't tear through it "as much" as a champagne yeast would, thus leaving it a tad sweeter...??? (i don't know...

    Successful Dry Hopping Techniques?

Ditto... just bottled a SNPA clone myself... just had to be extra carefull in racking to the bottling bucket, then in bottling. One thing I did do, I did let the beer sit in the bottling bucket for about 30-60 minutes... that just let some of the pieces of hop that may have gotten through...
