Sounds like you did not let it clear long enough. How long did you let it sit after it stopped fermenting. Mine nomally sit for 3 to 6 months after fermentation stops.

    When to oak

When is the best time to use oak. Should it be done during primary stage or during the clearing stage. I am getting ready to start a batch of concord and want to use some oak in this batch.

    buying equipment in pieces

I have found the best thing to use for cheap and very drinkable concord or niagara wine is the Welch's 100% frozen juice concentrate. I have a lot of wine snob friends and they all have liked it everytime we make it. I do 6 gallon batches and use 12 cans. It cost me $24 for the juice.

I have a 6 gallon batch of this in the clearing stage. I was very suprised how good this is. Looking forward to bottling this in a couple months.
