    Caramel Apple Hard Cider

    Has anyone had success bottling and keeping the bottles in the fridge once the desired carb level has been reached? I have the room and am trying to avoid stovetop pasteurizing.

    Well my fermentation was very slow on my cider. It took almost 3 weeks to get to FG. I do that for all my other beers so why would this be any different? More sugar from the concentrate and syrup in relation to the cup of sugar is use for beers?

    I had no airlock activity at all. I could smell the fermentation and like I said before, I'm down to 1.040 but it just doesn't seem to be moving as fast as others.

    Without having to go through 135 pages on this thread I'm going to ask a simple question: The only apple juice I can find is Pasteurized, 100% Apple Juice From Concentrate. Is From Concentrate Juice okay??

    Fruit Beer Lemon-Lime Hefe Weizen

    Brewed the extract version this week. OG was 1.058. Messed something up somewhere but I'm sure it will be fine. Will be adding limeade this weekend. So far it smells great in the fermenter.

    late extract questions

    I use DME and always add half at the beginning of the boil and the other half at 15 minutes. My color is usually spot on. Can't speak for LME.

    American IPA Bell's Two Hearted Ale Clone (close as they come)

    Cracked open a bottle of this today after only two weeks of conditioning and about four hours in the fridge. Taste was bitter, almost no centennial taste present. Looks like this will have to sit for a bit longer. At least another two to let it mellow. Will report back.

    Bottled this last night. Tasted great uncarbed. I will let it sit at about 68-70 degrees for two weeks then cool one in the fridge and give it a taste. Ill be back to let you know how it was.

    Took a second hydro sample and still at 1.012 making it right around 6%. The sample tasted great! The dry hopping really took it to the next level. I'll let it sit for another week then bottle.

    Brewed an extract with grains version of this last week. OG was 1.068. Took a sample today and got 1.012. Dry hopped an ounce of centennial and will let it sit before I bottle and condition. Taste was still young but wasn't bad. Color was great. I'm excited for this.
