I recently listened to an old episode of Brew Strong on the Brewing Network that was all about metals and their affects on beer. I suggest looking up that podcast and giving it a listen if you're really interested in this subject. Jamil and JP covered it very thoroughly.
I might try this method next time (pre-soak in booze). It has worked well for me with oak chips on the Double Barrel Ale clone I brew regularly (I use Bushmill's and it adds a wonderful whiskey note to the beer). I'd use vodka though, like you, with the cocoa nibs, as I just want to extract...
Possibly any of the above. Just yesterday I listened to an old episode of Brew Strong on the Brewing Network, which was entirely about attenuation. I suggest looking it up and giving it a listen, it had a ton of great info. It was like the second or third episode, from way back in 08 or 09.
I've brewed Jamil's Chicolate Hazelnut Porter (kit from MoreBeer) a few times. It has you add the nibs to the fermenter after active fermentation subsides. I do it a little different and add them in the keg. I hang them in a hop bag from the lid with dental floss. I like doing it this way...

Brewing a 10-gallon batch of Rough & Reddy Ale today. Not sure if we'll have this one kegged up by the Meet-Brew-Share. If we do, it'll be a little "green" still. Anyhow this is where we'll be on the 19th, hope you guys can join us :)

That looks like it might be a Beverage-Air unit, in which case it's an industrial quality. You can buy a replacement grate for the drip tray, just google online for Beverage-air parts sellers. There should be a name plate on it somewhere withe the model and serial number. Nice score.
