Winter Seasonal Beer Holly (Christmas Ale)

I'd say 30C (BJCP 2015 - Winter Seasonal) is the category you want to enter it in. Maybe state American Strong Ale as the underlying base?

    Saison Cottage House Saison

This has become my go-to Saison recipe over this past year. I've left the honey out, but the base recipe is fantastic. Have enjoyed playing around with oak and wines in secondary with it.

Winter Seasonal Beer Holly (Christmas Ale)

I made a tea before bottling and that worked great!

Winter Seasonal Beer Holly (Christmas Ale)

I think you'd be okay. I brewed late Sept/early Oct before and it was great. Even better around early February.

    Supplication Clone

Tasting was great, sorry for the delay. Has been enjoyed by several others as well. I'm told for as delicate a fruit as strawberry the flavor really comes through. Very nice pleasant tartness. Carbonation could be a little higher. One big important piece of feedback I've been given is to...

    Supplication Clone

Bottled and waxed, on 12/7/14. Will be tasting on 3/1/15. At that point it will be 10 months since brewing. At bottling it was fantastic. After 17lbs. Of strawberries they really come through. A nice rounded tartness. Will be nice to see what carbonation does.

    Love the wax jobs guys!

Winter Seasonal Beer Holly (Christmas Ale)

What yeast did you use? How much of the individual spices? Did you change up any of the malts? These would be the factors, I'd think. I opened up my last one, from two years ago, on Sunday, and it was fantastic.

    Supplication Clone

Will be bottling this on 12/7. Want to give it a solid 2.5 months before gifting some away. Ordered up some 375ml bottles. Was going to cork, but decided to go for crown style to save money this time and not buy a corker. Looking forward to tasting again and getting this carbonated and...

Spice, Herb, or Vegetable Beer Dark Chocolate Stout

Just because there's no airlock activity, does not necessarily mean the yeast is not hard at work. Do you have a krausen? Maybe give it 3-4 more days - since you did have activity off the bat. After 3-4 days take a gravity sample and see where you're at. Just my two cents, maybe some of the...

Spice, Herb, or Vegetable Beer Dark Chocolate Stout

I wonder if 2lbs. will be enough cranberry to stand out much against the massive chocolate notes. I like the idea though! Sent from my iPad using Home Brew

Can you Brew It recipe for Ommegang Rare Vos

Going to brew this up again in January. Brewed it last spring for a friend's wedding, and want to do a one year anniversary batch to surprise them. Thinking of doing a 100% Brett version to differentiate it from the original. Sent from my iPad using Home Brew

Winter Seasonal Beer Holly (Christmas Ale)

It's worth it. The spices really do well with age. Have one left from 2012 I plan to open over the holidays. Cheers! Sent from my iPad using Home Brew

Imperial Stout Rapture Russian Imperial Stout

Looks wonderful! Not giving up on mine yet. I will get this huge beer to carb. At least I'll know come brewing this again, in December, what to do next time to avoid the issue. Sent from my iPad using Home Brew

    Cuvée Mon Cherié

I believe that's what I've heard. Your best bet is to order directly from ECY. As for your LHBS, this might be the case with most. I had to special order my bugs. I don't think they're nearly as common to keep a nice supply stocked at all times. Sent from my iPad using Home Brew

How much does your "average" batch cost?

I've been wanting to keep closer tabs on each brew, as far as cost per bottle goes. I'll give it a shot with my upcoming Double IPA and Golden Pumpkin to see. Interesting reading the wide and not so wide ranges on this thread. But, I'll agree with what one guy said... It's my hobby, so cost...

Imperial Stout Rapture Russian Imperial Stout

Hopefully you get some more feedback on this question. I'd almost think that as long as you pitch a large (and healthy) enough yeast starter, you should be good when it comes to bottling. Doesn't sound like anyone else in this thread has had to add more yeast at bottling like me. Sent from my...

Imperial Stout Rapture Russian Imperial Stout

I used a 2.5 liter starter. I probably should have gone bigger, considering the carbonation problems I'm currently experiencing. I don't think two carboys is necessary. I did 5.5 gallons into a 6.5 gallon Carboy and lost just a little to the blowoff. Good luck! Definitely one ill brew again and...
