    I ended up going with a malty profile as well. I added Chalk and baking soda to 90% RO and 10% tap water. I added a bit of gypsum as well to keep my s04/cl ratio where I wanted it. Doing this gave me the water profile I wanted and gave me a projected pH of 5.4.

    You may consider finding a Brew Club near where you live. If there is one, perhaps you can ask for help? Maybe someone even watch you bottle a batch? It would seem that your processes are okay, however, it's hard to be certain through text.

    How to cool wort faster in Texas

    Probably the easiest and cheapest way to cool it quicker. I have my son move the pre chiller up and down while I move the IC up and down. This is done near continually until I hit my target temp. Have you measured the water temp coming out of the pre chiller?
