Bottles didn't get carbonated enough. How's this idea sound?

So my huge cannon ball stout has been resting for about 2.5 months total now, including about a month in the bottles. I cracked one open last night to see how things were going and I was really pleased with the taste, but, the carbonation was simply too low. It pouts completely flat, and you...

Any benefit to a t-shirt over the primary / secondary buckets?

Other than simply giving my primary and secondary plastic buckets a sweet new look, I figured that the t-shirt would help filter out any UV light cast from the basement florescent lighting. I am guessing this is overkill, given the milky white color of the bucket plastic which probably filters...

What is happening in my secondaries!?

I'm afraid I'm having a repeat of this incident (MINUS the dumping this time!) https://www.homebrewtalk.com/f39/barleywine-tastes-like-rubbing-alcohol-can-infected-but-look-fine-86918/ This time, I am doing the AHB Cannon Ball Stout. Austin Homebrew Supply Just like that experience...

Barleywine tastes like rubbing alcohol - can it be infected but look fine?

Well, some of you may remember my thread from 3+ weeks ago, asking questions about my barleywine. Well, it's had time int he secondary and tonight was bottling night. I always steal a spoonfull after mixing in the sugar, before putting it in the bottles and, well, I saved myself some bottling...

Any recipe clone for Dogfish Head 120 minute?

Hi all, Did a search, which is tough when it won't let you serach for "120", and didn't find anything. Anyway, has anyone come accross a partial mash recipe for 120 minute IPA? I'd love to give it a shot, especially at a quarter/third the price of what the real deal is retail. Thanks

DOH. Did my first mini-mash sort of like an extract/steep. Am I done for?

Up to this point (6 batches I think), I've done kits from Hoptech where I have a bag of grain that I put in the nylon grain bag, which goes in the water as it heats and is removed when it hits 180 degrees. Then after boiling, the bucket of liquid extract is added. Well, I ordered my first kit...

How do you suspend your grain bag to avoid burning through it?

When doing partial mashes, how do you all avoid having the grain bag touch the bottom of the pot, and burning through. In my prior 6 brews, I've tied the bag to a large wooden spoon and essentially hung/suspended it on the spoon, which rests over the pot. It's a pain to get it at just the right...

What's the likelihood that I infected my brew?

Obviously the best answer is, "wait and see", but I wanted to get some idea of the severity of my idiocy first. Brewed AHB's Holiday Special yesterday, and after it rested in the settling bucket for an hour, I went to transfer to the fermenter. Well, two things made this a pain (I was...

Barleywine - not done with final gravity of 1025?

Making my first barleywine (code blue kit from hoptech). Started 8 days ago and fermentation picked up the next day. OG was 1088/1090ish. Fermentation bubbles out of the air lock calmed down two days ago, and now do not occur. The gravity now is 1025. Is it done? I am skeptical, because when...

True that trub doesn't screw up SG readings (taken from spigot)?

Did a search and from waht I'm reading, I shouldn't worry about the trub mess that comes out of the spigot and into my sample, when taking a SG reading. I was worried that all that junk would "suspend" the hydrometer more than if it were in, say, clear wort that didn't have all those chunkies...

    Argh...squeezed the grain bag...am I screwed?

Made a barleywine batch today, and for some reason, decided I wanted max flavor/usage out of the grain and wrung the bag to get the liquid all out. Now, of course, I read on here that that's a terrible thing to do and will lead to off flavors. Am I likely screwed? If it helps determine, I...

Funny story of unexpected mess from brewing!

By now I've brewed 6 or 7 batches of beer, always using a large pot on the stove. Of course, during the hour+ boil, tons of grainy, sugary steam billows out of the pot. One night, we noticed that all around our kitchen ceiling, above the cabinets, were hundreds of little brown drips of liquid...

VERY low carbonation in bottles - is my remedy ok?

I was makign a Cream Stout, and purposefully added only about 1/3 cup of sugar into the batch before bottling, because I didn't think this should be a heavily carbonated beer. I wanted something thick and creamy, not fizzy and bitey. What I didn't think of was that I don't have nitrogen...

My first experience using oak chips w/bourbon

Hi all, I just wanted to share my experience to try and help others in the future. I was making a rough Oaked Arrogant Bastard style batch (more that "theme" than exactly that recipe by any means). In the secondary, I added a full couple oz packet of medium toast oak cubes (maybe 25+ little...

Smack Pack Broke - contamination issues?

I've used smack packs for my last five batches of beer with no issues. This time, I smacked it and the stupid thing burst at the bottom and squirted quite a bit out. I quick dove for the cabinet and grabbed a bowl to let the rest pour into. I squeezed the rest to make sure I got all of what was...

My experience swirling the primary after getting impatient

Just thought I'd share what I just did in the event it may help others down the road. Started this batch of spiced pumpkin (partial grain, canned pumpkin - in a grain bag so most could be removed). Used a wyeast packet that had been smacked 30 hours prior. Unlike the last two I've used that...

Crazy ballooned Wyeast XL Packet - nearly exploded?

I'm on my third batch of home brew. For the first one I used a Wyeast smack pack (the larger pitchable size). As per the directions in my kit, I smacked it a bit over a day before my brew. It puffed up a bit in that day or so, so I knew the yeast was at least doing something. When I pitched it...

    secondary fermenting question

I'm on my second brew (about to bottle tonight) and have never read the need for a secondary fermentation in any of the kit instructions. In the future, I'm going to try adding some oak cubes to a brew, and I believe this will need to take place in the secondary fermentation. My question is...
