    Holiday Beer with oak chips?

I'm brewing the Holiday Ale with the kit from Midwest Brewing. I tweaked the recipe just a little bit, but after touring the JD Distillery in TN, I heard about storing beer in the oak casks. I've thought about putting oak chips in the secondary, but I'm not sure how it would taste with a holiday...

    Pumpkin cider too alcoholic

So, when my gravity measured over 1.1, I thought I'd made a mistake, but yesterday when I moved it to the secondary (after sitting I the primary for 2 weeks), it measured out at 1.05 and it smelled like alcohol. I tasted a little and it tasted very strong. I dropped a cinnamon stick in the...

Could someone help me with malted cider instructions?

Dear Cider gurus, I have used this forum several times in the past to brew some pretty simple ciders, the most complicated being a pumpkin apple cider using champagne yeast. However, I decided to undertake a challenge using a friend's "Pumpkin Pie Cider" recipe, except he can't find the...

Good News! 1st batch is a success.

After 2 weeks in the bottle, I opened up two test bottles and it was a success. It was carbed with a nice head on it. It was also pretty tasty-not bad for the 1st one.

Siphoning from the brewpot into the primary

I have seen both, but I am brewing for my third time tomorrow and I was prepping tonight. Should I siphon from the brewpot into the primary or should I just dump the wort into the primary?

    Cream Stout Ideas

I am new to brewing and for my 3rd brew, I'm planning to brew a cream stout from a Midwest extract kit. I have the extract kit and I want to brew tomorrow, but I wanted to add something. I have seen that some people add coffee to cream stouts, vanilla, chocolate, etc. I live in a small town...

    First batch not carbonating

Okay, maybe I am being paranoid, but I really loved brewing. I'm already hooked and looking forward to doing this long into the future. However, I'm worried that my first batch isn't carbonating. It's been less than a week (I bottled on Saturday), but from what I can tell, it doesn't look...

    New to Cider

After brewing beer, I tried my hand at cider. I used a pumpkin-apple cider recipe I found here http://meadsafari.blogspot.com/2010/12/another-pumpkin-cider.html My question is: how long do I let it ferment in the primary? what about the secondary? I know the general rule for beer is :1, 2, 3...

    Hello from GA

A lot of my friends in grad school did homebrewing, so I've always wanted to do it. After I found a groupon, I decided to buy a kit. Since then, I've found some people in my small South GA town who brew and they have shown me the ropes. This weekend I bottled my first brew, an autumn ale, so...
