I have 3 pounds of Munich LME and 5 pounds of Marris Otter grain, as well as some other assorted specialty malts. Can anyone suggest a recipe?
This would be a partial mash.
I was thinking about a bock beer but I am not sure this is to style.

Given that there are 4 hop additions from boil through flameout, and that I only have whole leaf hops, how much additional water should I plan so that I yield 5 gals in the carboy?

Does it matter what bittering hop I use if I achieve the correct IBU level?
I recently picked up a few pounds of Cascade (7.5AA) whole hops at the annual AB hop give-away, and would like to use them for bittering. I use BeerSmith and can adjust the amount used to achieve the right IBU...
So if I underpitch and stress the yeast, or ferment at too high a temp, producing a poor tasting beer, should I harvest and reuse the yeast in this cake, or throw it out?
In other words, is the yeast still good?

So today I thought I would throw together a quick brew, doing and extract with steeping grains. I ran it through Beersmith as below which predicted 1.061, but it came out with a OG of 1.070 according to my hydrometer. Granted, either is higher than desired.

I searched on the subject above and could not find an answer,, so here goes.
I brewed a hefeweizen yesterday from a kit, and realized that there was no hops in the kit after I was already boiling. I called my LHBS and they said not to worry. The kit called for less than an ounce of saaz hops...
So I brewed a Mild 2 days ago. It should have come in near 1036 or so but came in at 1070. Its in the primary now and krausen has settled. Can I just add distilled (boiled and cooled) water to reduce the OG? Or should I brew a 1020 beer and then blend the two?
