    Yeast Issue

    I have read some about using yeast from previous brews or a bottle of Chimay. Will someone explain - in some detail - how this is done? Any information would be appreciated.

    too long a fermentation?

    i've had an california steam in the primary now for 11 days and she is still bubbling about 4x a minute. could this be a problem. temps are hovering in the low 60's. ready to place in a secondary, but want to insure fermentation is complete. what think ye?

    5 Gallon Carboy Primary?

    Curious as to why more folks don't primary in a 5 gal carboy. I have a California Steam going right now with a 5/8" blowoff tube and everything seems to be working well. However, I am new to the hobby and admit that I may be making a mistake here. What think ye?
