Alcoholic Ginger beer - help me!

Hi, not entirely sure where to post this, but I'm wanting to make some alcoholic ginger beer (bit like crabbies, although I'm not sure if you get this kind of thing in the states). It's not a beer as such; doesn't contain malt or hops and previous attempts a few years ago haven't turned out...

    WLP830 at warmer temperature

Hi folks! So I made a california common with WLP830; the German lager yeast instead of the normal San Fran strain, which is meant to be used at higher than normal temperatures for a lager. When I was looking for what this may do, I couldn't find much apart from questions, so thought I'd throw...

    Farmhouse Malt for WLP670

(In doctor Nick's voice) Hiiii everybody! I'm planning on a farmhouse ale to be brewed with WLP670 Farmhouse blend (has some brett in it) and wondering what people would use for malt bills to go with this. It's been quite some time since I've had a beer like this (choice in the UK for...

Notty or out of date SDSY

Hello! Need some opinions, although I'm pretty sure I know the right choice. Brewing a founders breakfast stout clone (2.5 gallons), I've got 2 vials of San Diego that expired 06/11 (brewer gave them to me). No time for a starter as I've just started the boil. Should I a) pitch both vials...

    Water too fail for stouts...

My stouts suck. My pales/IPA's are awesome. I've tried messing around with grist bills (lowering roast barley etc) and they still suck. So... had a look at water and used the EZ water calc. My chloride:sulphate ratio is a miserable 0.57 Calcium is 14.3mg/l (should be 30) Sodium is 10.6mg/l...

    Stout too bitter/astringent?

I've been having problems with souts... they're not very smooth, even with low IBU's. it's more of a feel than a taste... a bit 'harsh' maybe is the best way to describe it. However, pale ales are fine and come out really nicely even with similar or more IBU's. I live in a softwater area and...

    Belgian Dry Stout

So a while ago I got the mad urge to do a Belgian dry stout and I'd thought I'd share the recipe and ideas I put behind it. Haven't put it in the recipe database as it's more a point of interest and discussion (it's good, but not good enough at first attempt). So grain bill: 7.2lb Pilsner 74.2%...

    Oak Aged Pensioner

This is a real nice, easy drinking ESB. I wanted more than the 'traditional' bitter, as I live in England and there is ample amounts of that around without needing to brew it. This beer is nice and fruity from the special-b which blends nicely with the oak. Had some efficiency problems recently...

    Suggestions for boozey-food dinner party.

Ok, so me and a few friends are doing a take it in turn dinner party type thing, and my theme (not that we specifically need themes) is to incorporate some form of alcohol into every dish (being a home brewer, what else was I going to do!). So far I've got: Starter: No idea. Main: Pork...

    Blackberries and Nettles

I was thinking, I'd like to do something weird for an 11-11-11 brew. I like nettle and blackberry fruit tea... it's juicy and refreshing without being too sweet so wondered if I could incorporate this into a beer! What do you guys reckon? I was thinking maybe a wheat as a base, but suppose...

    Dry Belgian stout help/advice

I have the ingredients for a really good saison that I've previously made but reading the forums today I suddenly got the urge to instead make a Belgian dry stout type affair. I've got some of my previous Saison left so won't regret not making it and plenty of IPA's / pales ales to last over the...

    Nottingham yeast time?

Just a quick one as I couldn't find much or any information on the actual time Nottingham yeast 'tends' to take. I've got an IPA on the go at the moment (used a lot of hops for aroma and enough for 60IBU) and I've still got 10 bubbles a minute coming out my airlock 9 days after pitching yeast...

    Wrong nutrients?

I've just bought some Youngs Ubrew yeast nutrients online, when they arrived it says "to ensure rapid and complete fermentation of wine" on the front! All it said when I order it was: Yeast Nutrient 100grm, Yeast Nutrient feeds the yeast. Will it be ok to use for beer yeast (I'm making a...

    Dubbel hops?

Hi! I'm putting a dubbel recipe together and trying to figure out how to get good use out of my hops. I currently only brew small batches and am a bit space confined so buying a couple of 100g bags is a bit of a waste. What I need is some hops that I can also use to make something like a...

    UK noob

Hi there! I'm Will from Sheffield in the UK. Spent a year on internship at a craft beer bar in New York (2008) and since returning to the UK I have been disappointed with the lack of creativity and availability of really good beer (it's all pale ales or bitters... boring!). So I thought...
