    Replacing Dextrose With Malt Extract

    The new issue of BYO has an American Barleywine recipe I would like to try. In the all-grain version, it calls for 14.1oz of dextrose (corn sugar). If I was to replace the sugar with a dry malt extract, what would the conversion rate be? Would I have to up the IBUs in order to compensate?

    What do you write on your bottle caps?

    It'll says it all. I put a batch number on mine. For example today I bottled batch 1117, an American stout. The 11is for the year, and the 17 is the 17th batch of the year. I keep the batch number with the corresponding beer in my log book.

    Crazy wild yeast

    I brewed my "American" saison today, and pitched my wild yeast. After tasting some of the beer from the 3000ml starter, slight spice and fruit flavors, I pitched it and then left for work. Check out these pics from fermentation. I have never seen a krausen like this.

    That Last Bottle of a Batch.

    How often do you wait to drink that last bottle of a great batch of beer you have brewed? I have a 12oz and a 22oz bottle of a great imperial porter that is really nice. I think Ill wait a year on the 22oz, and hide the 12oz from SWMBO. When I crack that last bottle it will be a bad and a good day.
