    could a person kill off the yeast before backsweetening by heating the ( in my case twisted tea) before adding the sugar? Would the high temps kill the yeast? Not planning on carbing it, so having any beasties left is a non issue. just thinking, why couldn't you heat it to a temp to kill the...

    elderberry wine...pleasantly surprised

    I just tried my elderberry wine that I made this fall. I was expecting tannins out the wazoo, but couldn't believe how mild it actually was. I have it on oak now, ( racked to the secondary on February 9th ) and could probably bottle it as it is, but I'm trying to get a bit more oak character...

    corneys for fermenting/aging?

    I have some corney's that I had planned on using for beer, but never got a CO2 tank. Since I hate to have brewing equipment around that isn't being used, could I put them into service as fermenters/aging/oaking vessels for my wine? :confused:

    did I figure these right?
