Honey in the bottom of carboy

Hello, I just started my first batch of mead a few days ago. It is bubbling but the honey and water are pretty separated so there is a thick layer of honey at the bottom of the carboy. Is my brew still fermenting?!

Hello everyone, I brewed my first brew on the 4th and was going to bottle on the 25th. I have only looked at it a few times since then and today I went in to see how it is doing and there is a layer of foam on top still. Should I hold off bottling or is this normal? Shouldn't it be done fermenting?

    The Carbonator Cap?

Has anyone ever had any experience with the carbonator cap? (shown here http://www.midwestsupplies.com/the-carbonater.html) I was wondering if I could use this to force carbonate my homebrew in a two liter and then siphon it into individual glass bottles or would it lose its carbonation?
