    'Branded' grains/extracts

    I see a lot of recipes calling for specific branded extracts: Muntons Light LME or Briess Amber DME or Blackrock Dark LME. Does the branding really matter, or is LME LME as long as the color is the same? Also, does branding matter for grains? Is Briess Crystal 40L the same as 'generic'...

    How long to Primary/Secondary

    This may have been asked before and I missed it, but how long should you keep a brew in primary and secondary? I have seen recipes that specify it and ones that don't. If a recipe doesn't say, how long should you leave it? Z.

    Difference between K Sorbate and Sodium Metabisulfate
