This may have been asked before and I missed it, but how long should you keep a brew in primary and secondary? I have seen recipes that specify it and ones that don't. If a recipe doesn't say, how long should you leave it? Z.

So, I followed a mead recipe that called for Sodium Metabisulfate. The bottle says "to kill wild yeast..." so I added it, waited 2 days or thereabouts, and made the mead (it's racked to bottle and aging). My question is: what's the difference between K sorbate and sodium metabisulfate...
