    Gives me Hope

This speech always gives me hope for the future, even it is from a movie. Charlie Chaplin - The Great Dictator The Greatest Speech Ever Made - YouTube -Geoff

    Back in the Saddle

Well, after a long 6 months the weather has been nice enough to brew outside again! Which means AG brewing. I missed it. Between the variety of taste and the cheapness of materials it is a great change of pace to extract. Rock on...:rockin: -Geoff

    Steam Beer Pilsner

Hey, so I don't have the patience nor the facilities to make a proper lagered Pilsner. However, if i were to follow the same recipe but pitch with an ale yeast, how off would the final product be? I usually ferment around 65 F. Thanks! Geoff

    Overflow consistency

So I checked my Sam Haine Pumpkin brew and it puked a little bit. The thing is is the solution is puked has the consistency of peanut butter. I've never seen anything like this with my previous brews. I'm going to assume it's just a yeast bloblet? Has anyone had this experience before?

How to tell the difference between stuck fermentation and a beer that finished high?

I have a stout that has been fermenting for a week. It started life at 1.047 and is sitting now at 1.020. It's been that way for three days. I used coopers brewing yeast, no starter, all grain recipe with a mash temp of 155. It's been at 65 degrees. My question is, how do you tell if a beer...

    Munich Yeast

Have any of you used Danstar's Munich yeast for fermentation before? I used it once before on a Frankenstein batch using a bunch of ingredients, but i've tried to use it to style this time. I've brewed a batch of summer wheat beer, and was curious as to what flavors the yeast imparts at...

    Fuggle Hop Flavor

So I took a hydrometer reading tonight on Orfy's english mild. It smelled and tasted rather woody, almost musty. It wasn't bad, tasted quite nice actually. Is that flavor from the Fuggles? I fermented with nottingham and the brew has been in the fermenter for a week. (has hit 1.008 from...

    Ribbed Better Bottles

Does anyone else have their yeast rafts stick to the sides of their better bottles, or collect on the ribs? Just wondering if this was normal. Thanks, Geoff

    Grain Shortage

So I have been reading several articles (admittedly a few years old) regarding the world grain shortage. Several of the articles relate to China's increased meat consumption, and how they are buying up vast amounts of crop to feed the animals. The article forecast a grain depletion by...

    Pouring a 22 oz bottle

What class do you pour your 22 oz bottle into? Everything that I have will fit a 12 oz alright, but is to small for a 22 oz. I really don't want to stir up the yeast when I set the bottle upright. Thanks, Geoff

    Yeast Pitch Vs. Fermentation Temperatures

A few hypothetical questions, If ale yeast is pitched at temperatures between 90-100F, but the fermenting vessel is cooled to 65 degrees using a damp t-shirt and an ice bath over the next few hours, what off flavors will this cause? At what temperatures do yeast start to die? While not...

    Using Cane Sugar

So I was thinking, would it be alright to use cane sugar to bump up OG if it is undershot through loss of efficiency? What kind of off flavors or bad alcohols would the sugar contribute? What levels would I have to add for 1 gravity point? Thanks, Geoff

Two pot All Grain over boil

Realizing that splitting a boil between two pots will have twice the amount of boil off, If i over boil (shooting for a 4 gallon boil, end up with 3.5 to 3) can I top up with water in the fermenter to 4 gallons? I assume the same amount of sugars would be available. Geoff

    What happens with low efficiency?

How important is having good efficiency if you hit your OG for the recipe? Just wondering

    10 gal Mash Tun

So I am going to make the jump to AG. Unfortunately I don't have the necessary equipment to brew 5 gallon batches, so i'll stick to 2.5-3 gallons. I have a 10 gallon cooler, but I was wondering if that would be to big for 6-8# of grains? Thanks

    Substituting DME for LME

I was looking at a recipe that called for 5 pounds of DME. can I use 3 pounds of DME and two pounds of LME to lower costs, or will that affect taste? Thanks

    Topping up an all grain

Suppose you don't have a 5 gallon pot to do a full boil. Could you do a 3 gallon all grain and top it up to five gallons and still hit the correct OG for the type of beer that your making?

    Fermentation Bubbles

Yesterday my fermentation process was putting out light fluffy bubbles on top of the beer. maybe about four inches deep. Now today those have gone to kind of ivory colored malty bubbles that are very thick and look slimy. Whats up with the new bubbles? I'll get pics soon. (Same beer as my...
