Very vigorous fermentation & Off flavors/odors?

I know there's no way for any of you to know exactly what I'm smelling so I'm really just asking for thoughts here. I brewed an extract red ale using safale - 04 yeast. I always make a sarter and it was going well when added it to the primary. Well the fermentation temp was at the high end of...

    Maltodextrin - amounts and when?

I'm curious to get some input on this. I'm brewing a 5 gallon batch of fruit (cranberry) ale. I'm using a recipe that I have tried previously and found it to lack a little body. I was thinking of adding some maltodextrin but am not sure how much...this will be my first time using this. This was...

    Fruit flavorings/concentrates - Boil?

I'm doing a fruit ale with a fruit flavoring/concentrate and am getting ready to rack to secondary...then a question hit me (better late than never I guess!!!) How do I sanitize the concentrate? Should I mix it with some water and boil for a few minutes or is this even necessary? Thanks in...

Beer is good!!! (The Buffalo Theory)

One afternoon at Cheers, Cliff Clavin was explaining the Buffalo Theory to his buddy Norm. Here's how it went: "Well ya see, Norm, it's like this... A herd of buffalo can only move as fast as the slowest buffalo. And when the herd is hunted, it is the slowest and weakest ones at the back...

"Clearer" fruit ales (i.e. other than wheats)

I'm always trying to introduce more people to "good beer" i.e. micros, brewpubs, and of course and arguably most impotant my homebrews. :D I'd like to take a cranberry ale home for Christmas...I know, I'm cutting it a little short...but it will be kegged so I can shave a little time...

New Kegging equip - before 1st use???

I'm new to kegging my brews (tired of bottling!!!), and had a question regarding new kegging equipment. I have cleaned the keg itself and have a batch ready to be pressurized. The CO2 tank, regulator, and hoses are all brand new. Do I need to do anything to them before I hook everything up? I...

    Less Hops in full boil?

I'm a newbie and am brewing my second batch toady. I understand when boiling the full 5 gallons, you are supposed to reduce the hops. If the recipe calls for a 2 gallon boil, how much should I reduce the hops for a full 5 gallon boil? Thanks in advance.

I can't be the only one from Colorado!!!

I'm brand new to the site, and to homebrewing. I just made my first batch Friday night (Fat Tire Amber Ale clone) and it's in the primary doin' it's thing. I can't wait! I saw this link http://www.frappr.com/homebrewtalknation in another post, and thought why not include it again to see...

Adding Brown Sugar to an English Brown Ale?

I'm a newbie (first batch ever is in the primary) and am planning my second already...I love the way the house smelled!!! Anyway, I bought an English Brown Ale Kit but it sounds like it might be a bit boring. I don't want to get crazy yet, but I like darker, fuller body beers with low...

    Secondary AND a bottling bucket???

I'm planning to use a secondary fermenter. I know this will get rid of the "crud" in the bottom of the primary, so do I still need to use a bottling bucket, or is it OK to prime and bottle directly from the secondary?

    Ale fermentation temp

This is my first post...great site! I have a feeling I will be here a lot. Well my first batch ever is in the carboy...Woo Hoo!!! That was fun! As a scientist by training, I tend to over analyze at times, so I thought I'd just ask the pros. I've read at least a half dozen different sources...
