    Sediment with malolactic fermentation

I've noticed that I get a ton of sediment after malolactic fermentation. Even more than first racking. And even after the next racking. Is this common?

    In search of recipe

I did some searching, but not finding... I have some Alexander's Wheat LME, and some Munton's Amber (LME) and I'm looking for a recipe, some hops and suggestions for steeping grains, to make some beer this weekend. Any recipes welcomed and appreciated. thank you.

Carboy cracked; question about salvaging wine

My friend and I made 15 gallons of wine from about 200 pounds of California grapes. Tragically, the 54 liter demi-john cracked while he and his wife were carrying it down the stairs to the basement. We racked about half of it into a new container. My question is, when we rack this wine months...

First effort at wine from grapes

Resting today after "grape day" yesterday. Made a trip out to Columbus NJ to pick up 220 pounds of malbec grapes just in from Chili. Set up the crusher with my buddy and spent the rest of the day crushing, de-stemming, and preparing the must. Hopefully all will go well and next weekend we will...

    Do you like to cook?

I have a theory that a lot of homebrewers are people that also like to cook. They like the process of creating the brew as much as the brew itself. Or maybe if they don't like to cook, they like making things.

    Preserving kit wine

I made an RJ spagnols chilean malbec kit wine. Cru Select. The instructions said age at least 3 to 6 months, but if aging more than 6 months add sulphites. So I added 2 crushed campden tablets to six gallons at bottling. What effects do you think this would have in terms of preserving it and or...

Question about carbonating a cider made with ale yeast

I've got a cider going with S-04, OG 1.060. I've read that the ale yeast will leave behind a little sugar, not ferment all the way like Montrachet. Now, my question is, will that yeast still be able to carbonate if I bottle prime? My thinking was that if the yeast had petered out at something...

    Brewin' in Philly

I've been on the HBT for about a month. Great site, great people. I saw an interesting rant from Revvy about being pigeonholed after a fellow noob was wondering what the "home brewer" stereotype was. And so I thought I would say something about myself here to show the variety of people who get...

The obligatory "My First Brew!" thread (Dark Star Brown Ale)

After weeks of reading this forum, two a day drills, scrimmages, and the like, it was time to take the field!! All I want to say is, this was fun. I got a Northwestern Dark Star Brown Ale kit (has anyone tried this?). The prep, the boil, the drinking of the pumpkin ale I bought last month, the...

    Question about Campden tablets

I have seen some cider instructions call for adding campden tablets each time you rack the cider even if fermentation is not fully complete. Do campden tablets kill commercial yeasts, or do they just kill the wild yeasts and bacteria?

Cyser - added honey in secondary - will it work?

For reasons I can't explain, I did a plain cider for 4 weeks in primary and then added honey when racking to secondary. I hit it with campden and then a day later re-pitched yeast. Will this work?

How much honey to add to my cider?

I've got some fresh unpasteurized juice with an OG of about 1.045. I think that gives me a final estimated alcohol content of 6 percent or so. I am going to do a 3 gallon batch and would like to raise the OG to about 1.065 -- final alcohol content to 8 to 9 percent max. Any suggestions on how...

    My wild yeast cider

Newb here. First project ever. I have 3 gallons of fresh cider in a 3g better bottle. I used the natural yeasts only and no extra sugar. Had some good fermentation, I think. It's been in 3 and a half weeks. Lots of sediment and the body is starting to clear. Bubbling is slowing considerably. I...

Does SWMBO know that you refer to her that way?

    I was just wondering.

    water jug as carboy?

I saw someone selling 5 gallon jugs of water cheap, like $5 -- the kind that go in a water cooler. Are these jugs suitable for brewing as carboys?
