Looking for a good apple pie cyser/mead

I'd like to make an apple pie or other wintery cyser or mead to give out as gifts for Christmas. Do you have any good recipes that would be ready by December?

Favorite winter ales with quick turnaround

I'm trying to start a new tradition with my family. This thanksgiving we are going to homebrew a batch together to drink on Christmas. Can you reccomend any good winter/christmas beer recipes that will be grain to glass in 1 month. I will be kegging so that should help a little on the...

Out of C02. Can I transfer and perge tomorrow?

I was planning on kegging my pliny the elder clone today but I just realized I'm out of c02. The closest place that does fills is already closed. Normally I tranfer and then purge with c02 right away. Would it be safe for me to transfer to the keg today, keep the beer in there until...

    Corn sugar in pliny clone

I'm brewing this Pliny clone today, and the recipe calls for 12oz of corn sugar added to the boil. https://www.homebrewtalk.com/showthread.php?t=296940 I forgot to pick that up at the homebrew store. Can I use cane sugar instead?

What temp to keg condition at?

I made a bananas foster cream ale that has had 1 week primary, 2 weeks secondary, and 5 days cold crash. I am ready to keg it. Since it is a high ABV beer (~10%) I believe it is going to need about a month keg conditioning to be really ready. Should I condition in my kegerator (~40 degrees)...

Does anyone else ignore their water?

My first few batches I purchased gallons of drinking water at the store and brewed with that. However, my last 8 or so batches, to save money, I've used tap water (without any additives) and had great results. Does anyone else just ignore the water chemistry part? Maybe I'm just lucky and...

Why would beer get darker in the carboy?

A week ago I made a SMASH 2-row cascade session IPA. It started off extremely light (maybe 2-3 on SRM scale) but after a week in the fermenter it has clearly gotten much darker (probably 6-9). Does anyone know what would cause the beer to darken like this in the carboy?

Aging on yeast vs in keg

I have a beer that I want to ferment for three weeks. Is there any difference between: - Fermenting in primary for 1 week and then letting it sit in a keg for two. - Fermenting in primary for 3 weeks then transferring to a keg.

    Extremely light beer

I made a SMASH 2-row cascade IPA the other day, and I underestimated how light the beer would be with just 2-row. The color looks basically like this (maybe a pinch darker because I used a bit of carapils to improve mouthfeel). This image came from google. Looks a little gross, but I guess...

    Yeast nutrient in secondary?

I'm racking a bananas foster ale which requires 5lbs of banans in secondary. Im thinking the extra sugar will 'wake' the yeast up... so would some yeast nutrient be helpful?

    Am I ready for secondary?

I normally do all primary fermentation, but im 7 days into this bannas foster ale which requires bananas to be added in secondary. Its been 7 days and i had about 3 days of really agressive fermintation. The last two days Ive been getting the occasional bubble through my blowoff tube. Should...

    Smashing with low AA hop

I want to do a SMASH IPA with crystal hops. However, the AA% is only ~4%. Would you recommend it at all for bittering? Would a hop schedule like this make sense? Do you think it would be bitter enough for an IPA? 5 gallon batch: 1oz 60min .5oz 20 min .5oz flameout 1oz dry hop

Is 1 dry yeast packet enough?

I'm making a big batch SMASH with 16lb of 2-row. Is one US-05 yeast packet sufficient (with or without a starter)?

    Malt suggestion for SMASH ipa

I'm going to make a pair of SMASH IPA's, one with Summit Hops and one with Crystal hops. What do you recommend as a base malt?

    Bulk grain etiquette

My LHBS sells grain by the oz, but also sells big 50+lb bags. I usually just buy and mill (they have a mill available for use in the grain room) my grains for each specific batch. If I buy the 50lb bag would it be rude to take it back there to mill as needed for my brews? I would still be...

Would this work for a DIY wort chiller?

Looking at this copper pipe: http://www.homedepot.com/p/Unbranded-3-8-in-O-D-x-20-ft-Copper-Soft-Refrigeration-Coil-Pipe-D-06020PS/202287075?MERCH=REC-_-NavPLPHorizontal1_rr-_-NA-_-202287075-_-N Is 'soft refrigeration coil pipe' is the same as regular copper pipe? And is 20' long enough?

    Favorite columbus hop recipies

I have a full pound of Columbus hops I've been meaning to use. Can you recommend any recipes that use primarily Columbus? I also have an ounce of chinook and centennial leftover. Thanks!

Vanilla Belgian Blonde - Critique my recipe!

Brewed this a week ago and just started secondary fermentation yesterday. I'm going for a sweet/spicy saison style with a noticable vanilla flavor. The base of this recipe was modified from this centennial blonde which I've brewed before and it turned out great. I had extra centennial and not...

Belle Saison in centennial blonde ale?

Do you think Danstar Belle Saison yeast would be a good fit for this centennial blonde ale? I made it with notty and it turned out fantastic! Would like to try with this saison yeast, which I believe will impart an orange/lemony taste to the beer. Thoughts...

    Yeast starter for harvested yeast?

I've got a few 1 pint jars of yeast I harvested a little more than 1 month ago. They have been in the refrigerator ever since. Each jar has a thick layer about 1-2 inches of compacted yeast, and then to the top with some beer that was mixed in with the yeast cake before harvesting. Do I...
