fermenting at the bottom end of yeast's temperature range?

This coming saturday I am going to have some friends over and we are going to be brewing 2 batches. We are doing a nut brown ale and a basic hefe. I do all of my fermentation in the basement in my "beer area." The basement is basically just 1 huge open space so I just use the area that has the...

sometimes I get in fights with my equipment

I was bottling tonight and I broke a racking cane. I seem to have a very difficult time getting along with racking canes. In fact, this is the 3rd one I have broken. They always get stuck in the tubing and I can't get them out for the life of me. I pull, I twist, but they don't budge. Then I...

    oops...airlock compromised

A few months ago I did a batch of chocolate espresso stout. This is the first beer that I've made that I've allowed to sit in secondary for any real length of time. It's been maybe 4-5 months. At first I checked on it diligently, but after awhile the temptation to drink it was killing me and I...

    question about extract types

I am going to be brewing an espresso stout on sunday. The recipe I am using calls for 6 lbs light syrup and 3 lbs dark DME. I was looking around in my supplies in the basement and I realized that I already have on hand 6 lbs amber syrup and 3 lbs light DME. I was wondering if this would be...

    cold brew coffee

I am looking for a few pointers from anyone that has experience brewing with cold brewed coffee. My next batch is going to be an espresso stout and I'm almost ready to brew. But I have a few questions. Ive decided to use cold brewed coffee because I am bottling. I wanna cut down the oils to...

    Sanitizing bottles

I am wondering what people are using to sanitize their bottles. From what I have been reading, Starsan seems to be a popular product. Is this good for bottles and what is a good procedure? The reason I am asking is that I am about to start my 3rd batch and am unsure of the results I got on my...

    Temperature Control Problem

My girl and I just moved into a new apartment. At the old place we had a spare bedroom that had basically become my computer/ xbox / brewery room. It was great because I had tons of room for my brewing and I could easily regulate the temperature in the room. Now we have moved to a much nicer...

    Head retention

I am currently drinking my first batch of beer. Its a hefeweizen. I didn't use quite enough malt so it turned out a little too light for my taste but other than that it is quite good. I bottled it maybe 3 weeks ago and the level of carbonation is very good right now. However I am having varying...

    coffee stout?

I am a barista and a coffee lover. So is swmbo as well as many of my friends. I really love a good stout and there is a brewery here in Milwaukee that makes a pretty good coffee stout that has inspired me. I would like to try making an espresso stout. I am wondering if anyone has any recipies...

    tasted first brew tonight

Tonight I took a sample of my first batch for a gravity reading. It is a hefeweizen. I brewed it up 9 days ago. In the last few days airlock activity has slowed to a crawl so I decided it might not be a bad idea to take periodic readings to see if its winding down. I took off the stopper and...

    priming for bottles- advice plz

The book that I am reading says that to prime for bottling you should boil 16 oz of water and add 3/4 cup corn sugar OR 1 1/4 cup dried malt extract. I have corn sugar and DME both on hand so I could use either. I'm just wondering what is the prefered method if there is one. Any advice?

secondary for my hefe, or no?

my very first batch has been in the primary for about a week now and so far all seems well. It got a slow start, about 32 hours to start fermentation (shoulda used a starter) but everything is looking good now. It is a wheat beer and I used White Labs hefe yeast. I have read the threads and...

    first batch- looking for help

hi everyone, first post here. I made my first batch of beer last night and I think I am having some trouble. It has been about 24 hours and I see no signs of fermentation. No foam at all in the blow off hose, and I put on the fermentation lock, its not bubbling at all. It looks like nothing is...
