Trouble hitting the correct boil volume

Hello, I seem to be having issues getting consistent final volumes of beer. I am guessing it's just disapearing during my boiling of the wort, but it seems to be so random. For example I just did a peach heff with 7 gallons of water between mash and sparge. After a 60 minute boil I would...

Gravity Readings -- Leave it in!

Pretty new to brewing, but had a thought... So everyone is always asking about when to take gravity readings for various things, and how it is a better indicator of fermentation, etc. etc. It seems like everyone steals a bit of beer from their carboy though, and then takes a reading...

    Why not add sugar?

My understanding of sparging is that you are shooting for maximum sugar in your wort. My question is why not just add sugar of some kind directly to the wort? I assume it would add an odd flavor?

    How clean is enough?

So I am new to home brewing, my first batch is in it's second stage of fermentation now. My question though is about the cleaning and more specifically sanitizing of equipment. It seems to be a pretty standard theme across all brewing sites and videos that you must sanitize everything and...
