    Belgian Wit questions

The gravity of my belgian wit is now at 1.010 at 72F. So with reasonable confidence, I can say that it's done fermenting. I know you're supposed to drink hefeweizens young and clarity isn't an issue with a wit but considering the coriander and the orange peel, should I age it? And if so...

Couple questions and a prediction request.

First the recipe: Recipe Type: Partial Mash Yeast: Wyeast German Ale (WY1007) Yeast Starter: Nope Additional Yeast or Yeast Starter: Nope Batch Size (Gallons): about 4.5 - supposed to be 5 Original Gravity: Supposed to be 1.054 according to Beer calculus - missed it at 1.042...

    Layered seperation

THis is the second batch thats done this. It appears the trub is not completely flocculating and is getting stuck in suspension in layers. The last batch that did this sat in the primary for 3 months and never cleared. It took a healthy does of poly clar to clear it. I cant do that with this...

    Never fear the foam?

I think I'm going to go ahead and fear it this time around... This is my first time using star san in a fermenter. Wasn't expecting that much foam. Perhaps I won't shake it so much next time...

    Keg Connection

Just wanted to give praise to keg connection. My kegs got to me in 48hrs. I took them apart expecting to have to rebuild the kegs, since they weren't new, only to find that they were spotless and all the gaskets had lubricant on them. Ace. +1 for keg connection

    Anyone ever tasted trub?

After a succesful bew day, several beers and a drunken dare, I decided to sample some trub. I use muslin bags for hop additions and my irish moss so there wasn't any hops in it. Lo and behold, it actually tasted pretty good. It looks disgusting, but it tastes like really sweet cereal. Now I...

    Interesting brew day...

Another glorious brew day. Couple of suggestions and a question. 1. If you don't have scales and need to measure out a fairly accurate weight, just use the fact that 1mL of water weighs 1g and 28g=1oz. then place your measured amount of water into a plastic cup and float it in a pot/bucket...

    First Starter

Showing off my new toy and I got a couple of question: I don't have a stirplate yet so should I be giving it a good shake every now and then? I shook it up pretty good after the boil Should I be worried about over pitching on brew day? I only used 1/2 cup of DME in 1200mL so I wouldn't...

    Priming with malt extract

I have a recipe that calls for priming with malt extract. Whats the procedure for this? Do I boil it all the way past hot break? What about the protein that breaks out of solution? Do I cool it and decant it off the trub?

    Beer getting worse?

I was feeling lazy and thirsty a few months back and purchased a no-boil, bag o' wort kit and brewed it up. One month after bottling I cracked one open and it had a sharp bitterness that I attributed to hops and a serious case of chill haze. I'm starting to think otherwise now. The bitterness...

    Blow off bucket tragedy

I was going to rack my coffee stout into my secondary when I noticed that my blow off tube had water from the blow off bucket creeping up it. It was maintained at a constant temperature so what else could cause such a pressure drop inside the carboy? Now for the tragedy, many of you probably...

    When does it end?

I'm competely addicted to homebrew and the homebrew process. I get excited when I buy something as mundane as a nylon boil bag. I somehow manage to spend $40 more than I intend at the homebrew shop, everytime I go. Theres always a better gadget to buy/make. My question: Is there an end...

    Mismatching yeast

What would happen if I pitched ale or lager yeast in wheat wort? And less appealing sounding, what if I pitched weizen yeast into a batch of ale? Normally I'd throw caution to the wind and try it out and see but after a few experimental batches that turned out...interesting, I figured I'd...

I am dumb and have a dumb question

First, an explanation of why I am dumb. I somehow WAY over primed my beer (in bottles). Must've been tired or something. Anyways, the beer is undrinkable. You open the bottle and it empties itself out in a fashion reminiscent of a fire fighting boat. Not only that, the yeast content is...

    Swirling your beer?

I've seen this with wine but never beer. These guys do it CONSTANTLY. It's almost annoying, but maybe that just because I think it's rediculous. Can anyone enlighten me to the purpose of swirling your beer?

How do yall store Your malt/sugar

How does everyone here store their DME? I just a had a bag spill in my equipment box for the second time and I dont't think I have to tell you folks how sticky that junk is.

    How much corn sugar?

I'm brewing a hefeweizen at the moment and it's time to bottle. The problem is when I was copying the recipe from a book at the brew shop, I forgot to write down the amount of priming sugar to use and the amount of water. And they're closed till wednesday. What I do know is it's an extract...

    Hi from Arlington, TX

Hey everybody. How fast can I brew something like Bud Light but with way more alcohol? Just kidding. It seems homebrewers generally get the same kind of questions everywhere. Just started in January and loving it. Got some Mackeson Stout which I added some espresso to in the secondary...
