    Bearenstain Brown Ale

I made this 6 weeks before Thanksgiving because my wife and I were having the family over for the day. Other than the few I had before Thanksgiving, we pretty much killed the keg. I also gave out a growler. It was gone in 3 days. Bearenstain Brown American Brown Ale Type: Partial...

    Imperial Brown Ale critique

Hey everyone, I'll be brewing this recipe this weekend and wanted some opinions before I go to the LHBS in the morning. It'll be called "Mostly Harmless" to keep with my Imperial beers being named for Douglas Adams references. It, along with an IIPA("Don't Panic"), is going to be given as a gift...

    US-05 @ 79F. What off-flavors to expect

Hey everyone, I know this has been covered before but I read all the posts that search brought up for me and can't find a definitive answer. The mini fridge that controls my fermentation cabinet gave up the ghost Monday night(I guess) and I checked my 10 gallons of IPA I had fermenting this...

Yakima Twilight clone recipe. tell me what you think

So because my local beer store only got a case of Yakima Twilight, and I only got a sixer, I've decided to make a clone recipe based on what the informationally frugal guys at Victory told us. This is just a shot in the dark and I won't be able to try it next to the real thing so basically I'm...

WTT: my perlick for your ventmatic?

When I built my keezer, I originally had 2 shirron ventmatic faucets. Lif ewas good, I was happy. Then I started brewing/drinking more and needed a third faucet. Shirron had stopped making the ventmatic faucet so I got a perlick. I've had the perlick for almost a year now and I hardly ever use...

    Need some ESB Help

So, it turns out a good thing was turned into a bad thing last sunday when I brewed my ESB. I overshot my efficiency by 9% and what was supposed to be a 1.065ish beer turned into a 1.072. I wasn't expecting 84%. Anyways, I bought S-04 for the beer. Its attenuation is 65-70% and it has left...

    Another IIPA recipe opinion ?

Hello friends, I know there have been a bunch of these recipes floating around recently but I wanted to put my recipe out there for everyone to judge, critique, oogle, and give thoughts or suggestions. Its not a Pliney clone or anything. Just a super hoppy beer than i can be proud off...

    Yeast cake pitching

I know this has been covered before, and I have searched and read as much as my brain can handle; however, I still have a question. I'm brewing a Barleywine this weekend and my expected starting gravity is 1.107. I'm planning on pitching this on top of the us-05 cake from my IPA which was...

    US-05 got a little hot

I had my american ESB fermenting at 70 last night and it was up to 75 this morning. I took it out of the temp controlled cabinet which got a little warm and its now sitting in my basement which is 64. Will this effect the flavor significantly or do you think a couple of fruity esters might help...

    Chocolate Mint Stout Critique

EDIT: Final Cut Recipe So I'm making a chocolate mint stout for Christmas gifts and want ya'lls opinion. Yup, ya'll. I'm from the south. Anyways, I had some Southern Tier Creme Brulee Stout and was amazed at how much it tasted like Creme Brulee, so I thought I would make a beer that tasted...

Beer vs. Wine book on Food Pairing

Don't know if you guys have seen this yet, it came out in March. Its a food pairings book by Sam Calgione and Marnie Old where they debate which pairs better wine or beer with different types of food. They give recommendations on different brands and styles. Its a pretty good book. My in-law's...

My new Barley Crusher is great!

So after a few batches with the LHBS crush, I got a barley crusher for my birthday. My efficiency went up from 68% to 77%! I now have the strongest rye wheat ever.:D SG is 1.060 and it has strong airlock activity after 10 hrs. So stoked. Mike

"Set it and forget it" not working?

So I've had my keg of Dos Equis Amber clone in the keezer for almost 2 weeks now and it still doesn't seem to have the right carbonation. I also have my brown ale in the keg under pressure for a week, and it is not at the proper carbonation level. I tried the set it to 15 psi and leave it...

    First keg nightmare

So I just kegged my first batch and for some reason the carboy cap siphon would not hold. No matter what I did I couldn't keep the beer flowing. I eventually had to drain the beer out of the carboy into a bottling bucket and then into the keg. I think the hose got turned some way in the keg not...

    lagering WLP 810 Frisco yeast?

I made a dos equis amber type beer using the Frisco Lager yeast and was wondering if I need to lager it or condition at the 62 F I primaried and secondaried at. I'm going to keg it but I don't know if I should cool it now. Its been 8 days in the primary and 14 in the secondary. I was going to...

    High final gravity question

So I don't think I aerated my wort enough before I pitched my starter. This is my first AG beer and didn't think about having to aerate more due to the full volume boil. My beer started at 1.052 and I transfered it to the secondary after 7 days and it was at 1.020. Thats 62% attenuation with WL...

    Kasteel Belgian Tripel Clone?

Does anyone have a recipe for this? I tried it last night and was amazed by the flavor, aroma, all around awesome beer. And its 11% By buddy's SWMBO ordered two or three and was on her ass in no time. :tank: But all she could do was slur about good the beer was. I'm going to try and brew this so...

    Another 1st AG

Just wanted to run this by you guys as it is my first AG brew, and will be a house warming gift for my best friend. He loves Dos Equis Amber. I don't have lagering capabilities so I'm doing an experiment. Check it out and give your 2 cents. 5 gallon batch 6.5 lbs 2-row Pale malt 1 lb...
