Double bittering hops/Cut boil time in half?

I'm what I like to think of as an intermediate homebrewer (Mini-mash due to space and equipment limitations) but a thought crossed my mind today. My normal brew process is to boil between 2.5 to 3 gallons for an hour. Between the 60 hop addition and 30 minute hop addition I do nothing. Would...

Adjustments for a 1-Gal Test Batch

All my beers have been 5 gallon mini-mash batches, white bucket fermenter, you know. I'm interested in trying a few unique recipes (Peanut Butter Porter, Pumpkin Ale) and I'm not sure if I will like them, so I'd like to make a 1-Gal test batch. Besides reducing ingredients (obviously), what...

    Anyone involved with BJCP?

I'm looking to get involved and become a certified Judge. I headed over to the BJCP website and it was very informative on the tests, styles, and things of that nature, but how do I get started, besides taking the test? Are there things I need to accomplish before sitting for an exam? How do I...

found a cider i want to turn hard... suggestions?

Today I found a cider I really enjoy the taste of. Its slightly sweet, very smooth, with a bit of cinnamon/spice in the background. I'm hoping to use this as a base for a hard cider, but I've never made a hard cider before. I'm looking for a yeast strain and/or other ingredients that would be...

    My Morning Jacket

Anyone here a fan of this amazing band? If not, please do yourself a favor and check out some tunes of theirs. Extremely hard to describe their style, as it often changes multiple times in one song. Check out some tracks off their double-disc live album "Okonokos"... Gideon, Off the Record, and...

A Couple questions about a Vanilla Porter

I'm planning on buying a Vanilla porter kit from Austin Homebrew Supply and I've got a few questions. I've read that a beer like a porter or a stout takes longer to be drinkable than an average ale would. I usually bottle my beers about 3 weeks after brew day and let them bottle condition...

    Good beer stores near Philly?

Hello all... I live around Philly and am in search of a good place to buy singles. Due to PA's awful case law its tough to get singles for a decent price here. I've been to Total Wine in Claymont, DE a few times but their singles selection isn't that great. Any places in DE or NJ that aren't too...

    Brewing history

We often see beers marketed with symbols of 1776 and the beginning of our country, the pre-prohibition :golden age" of brewing. My question is, how did they brew back then in the first place. Surely our founding fathers didn't have access to turkey fryers, propane, pressurized CO2, and most...

    Storing Star San

Star San is kind of expensive and I know its reusable. I'm thinking that using the same 5 gal batch of it on brew day and then bottling 3 or 4 weeks later. During the interim would it be safe to store in a spare bottling bucket? Would that damage the plastic or effect its sanitizing effectiveness?

    Keg/keggle/corny?

I'm an extract brewer who bottles and probably will stay that way for a while... but I'd like to know what you guys are talking about on here! Please instruct me as to the differences of these pieces of equipment :)

Question about the size of a carboy.

I'm thinking about making a few half batches of lagers because I have a small refrigerator that I might be able to use for fermentation and lagering. I have a limited headspace in it so if anyone has a 3 gallon carboy lying around and wouldn't mind measuring its diameter and its height I'd...

    Cranberry lambic?

Right now I'm drinking a Sam Adams Cranberry Lambic, and although its not a great beer, it does taste pretty good, something other people (read: non-homebrew friends) would definitely enjoy. Anybody have a good clone or recipe for this tasty beverage?

    I'm broadening my horizons

I'm trying to broaden my horizons when it comes to beer. I'm well beyond drinking BMC crap, but I would like to try more styles and brewries besides Yuengling and Sam Adams (my go-to beers) Here's a list of beers that seem to get broad approval, what styles and brands should I pick up a...
