...or until starch conversion is complete

I'm new to all grain. Seeing recipes with "mash for 1 hour ...or until starch conversion is complete". How do I know when starch conversion is complete? Is there a way to test?

Looking to trade Toppling Goliath Pseudo Sue for Pliny or Heady Topper

Hey i've really been wanting to try Heady Topper and/or Pliny the Elder. I have a Toppling Goliath Pseudo Sue Pale Ale which is the best beer made in Iowa. Often compared to Three Floyds Zombie Dust but often ranked even better. It's very hard to get around here. People follow the delivery truck...

mash tun design - wide and short vs narrow and tall

Looking to build a small batch mash tun (2gallon). There are a few I'm looking at and one is taller and narrower, the other shorter and wider. Any benefit to one or the other when stirring, sparging, etc ? The wider one fits a 9inch pie sheet perfectly so want to go w that but everything...

Low OG - yes i read the FAQ - due to filtering wort/whirlfloc??

Hi i've made my 2nd LME kit and they say the OG should be 1.066. I know from my first kit that the OG can be off d/t mixing, reading from top/bottom of the bucket, etc, etc, etc. The first beer i had was way over and now this one is way under at 1.052?! I made sure to mix the hell out of...

    Boiling excess water?

I am brewing a 5 gal batch w 2.5 I'm the pot for the wort. I've boiled the other 2.5 gallons of water to mix and left it on the stove to cool for 2 days w the lid on. Ok to do?? Will there be bacteria risk since it took a lo.g time to cool down and /or has been sitting out (w lid) for 2 days??

Whirlfloc at same time as last hop addition?

I am going to be using a whirlfloc tablet for the first time - i see per the other posts that using 1/2 a tab at 5min left is recommended by the Whirlfloc people. My kit shows that my last hop addition is at 5min left in the boil. Can i toss both at once? I'm afraid it would just take down...

    90 minute "boil" recommended??

I have the Northern Brewer extract kit for their Red Ale. The instructions note that "Lakefront recommends a 90-minute boil for this recipe, making the first hop addition with 60 minutes remaining" The instructoins then go on to talk about steeping the grains and then bring the water to a...

40 bottles out of 5 gallons?!

I got the Octane IPA kit from midwest and it indicates that i should get something like 48-54 beers from the 5 gallon batch. Well i bottled and only got 40?! It should be noted that when i first brewed the gravity was high although i dont think i stired well and/or the wort may have been...

Cold conditioning - then back to room temp for 1wk?

I have about 10 days left in my secondary before i'm going to bottle. I am going to put 1oz Cascase and 1oz UK Kent Golding hops in my british ipa for dry hopping tonight... I was thinking of cold conditioning since the beer is extremely dense looking.. I dont have a fridge - the weather...

    Late stage clarifying

I brewed my first batch (Midwest's Octaine IPA extract kit). I didn't filter the wort in the primary - fermented for 2 weeks and now it's in the secondary off the trub. The beer looks extremely hazy. At this point in the process is there anything i can do to clarify? I read that cold...

Got a little yeast in the secondary when racking - first time brewer!

I got a little yeast in the secondary when racking. Not much but enough to see it on the bottom on my carboy. I would say at least 95% of it was still in the primary fermenter. Problem? This is the Octane IPA kit from midwest. I had a little taste as i racked from the primary to the...

    Original Gravity too high??

I got a kit from Midwest called Octane IPA. I found online the OG should be 1.067 OG (1.060 to 1.070). I used the hydrometer that came with my kit and it was more like 1.08!? Is that too high? Should I add more water to the fermenter bucket? I just brewed last night so no bubbling of the...
