Kegged my Hefe, now some questions

I just kegged my 3 week old hefe and probably the best one I've ever tasted even with it not being carbed and having to used a substitute wyeast strain! I really do think letting it sit atleast 3 weeks really helps it come out much better than trying to rush it. I can also greatly tell the...

Any thoughts to...

It's been the bottle for about 2 weeks and its the first one I've popped open. The recipe was for a Jamaican amber ale I got out of one of my homebrew books. It also doesn't have to much carbonation either. Since this is only my second extract brew I know I still have lots to learn. What could...

How different ingredients affect your hb..

Right now I'm at the stage where I am getting curious and trying out different ingredients from different brands. But I still have only done extract brewing. I am still unsure what exactly your malt extract and crystals do for your brew flavor wise. Also what does cracking the crystals before...

    My pale ale

After letting a couple of my pals try my first home brew we all agreed that it is quite bitter compared to others. Could anything cause your homebrew to be more bitter than usual?
